Title: Bistro Supervisor
Reports to: General Manager
Summary/Objective:
This position plays a major role in a guest's experience. A Bistro Supervisor must be friendly, outgoing, and possess good guest service skills.
The hotel restaurant is a fast-casual concept restaurant offering breakfast choices in the morning, and a variety of dinner and cocktail options in the evening. A menu including to-go options as well as full sit-down fare.
A Bistro Supervisor should be organized and able to think and act quickly and effectively while retaining self-composure. Consistency is a key element in a positive experience, which is achieved by always following drink recipes.
The supervisor will handle various tasks involving food preparation and service.
Essential Functions

- Welcome each guest personally within 30 seconds.
- Communicate with guests using clear and enthusiastic words, tone, and body language at all times. Make guests feel appreciated through your actions.
- Work as a team with all hotel personnel to maintain an effective atmosphere and an efficient food and beverage service.
- Work with others to keep all areas cleaned and stocked to company standards at all times.
- Mix, garnish, and serve alcoholic and nonalcoholic drinks for patrons of the bar and dining room following standard recipes.
- Ring drink orders into the computer immediately, collect money from guests for drinks and food served, and make changes.
- Arrange bottles and glasses to maintain an attractive display in agreement with company standards.
- Wash and sterilize stemware.
- Be attentive! Offer assistance before the guest has to ask for it.
- Count drinks guests are served.
- Place current bar tabs in the front of guests at all times.
- Monitor and ensure that no guest receives more than the allowed number of specific drinks.
- Anticipate your guest's needs. Follow the half-full rule when offering another drink. Be alert to guest signals (raising a hand, making eye contact, etc.), and acknowledge the guest to let them know the bartender will be right with them.
- Learn guests' names, occupations, and favorite drinks. This will make Courtyard Marriott a special place for them.
- Serve alcohol responsibly. Should a guest reach the state where the bartender does not feel the guest should drive, supply a taxi. Do not hesitate to ask for management intervention if necessary.
- Serving a wide variety of food options
- Preparing ingredients for cooking, including portioning, chopping, and storing food.
- Orders processing and collecting payment from customers
- Aiding in food & beverage areas including busing, cleaning, resetting tables, and delivering food to guests.
- General cleaning and maintenance of food and beverage prep areas
- Counting the bank at end of shifts and following property control audit standards and cash handling procedures.
- Following all company safety and security policies and procedures
- Report accidents, injuries, and unsafe work conditions to manager
- Completing safety training and certifications
- Ensuring uniform and personal appearance are clean and professional
- Maintaining confidentiality of proprietary information and protecting company assets
- Welcoming and acknowledging all guests according to company standards
- Anticipating and addressing guests’ service needs
- Assisting individuals with disabilities and thanking guests with genuine appreciation.

Work Environment
This job operates behind the bar and maybe working close to co-workers. The noise level in the work environment can be loud. Hazards may include, but are not limited to, cuts, slipping and tripping.
Physical Demands

- Walk and stand during the entire shift.

Position Type/Expected Hours of Work
This position regularly requires long hours and frequent weekend work. This position will require approximately 45 hours per week
Required Education and Experience
- High school diploma or GED.
- Prior experience working in a restaurant.
- Basic knowledge of beer, wine, and spirits, and familiarity with standard drink recipes.
- ATC Certification - Must be able to pass the Responsible Service of Alcohol Test with a score of 90% or better.
Preferred Education and Experience
- Prior experience as a bartender/cook.
- Prior experience with inventory/ordering
- Prior experience in a supervisory role
Additional Eligibility Qualifications
- Must be 21 or older.
- Must maintain an applicable state health and/or alcohol compliance card (ATC)
- Food Handler & Serv Safe Certification
Requirements:
- Able to work a flexible schedule including holidays and weekends (Saturdays and Sundays). This role will be scheduled split shifts on a regular basis, in which they will have responsibility for both opening and closing the Bistro
