Job Overview: As a Chef de Cuisine (CDC), you will be working closely with the Executive Chef. You will be responsible for the management of the kitchen, including assisting in menu development, food preparation, staff supervision, and maintaining the highest standards of quality and presentation. The ideal candidate will have a deep understanding of culinary trends, a strong sense of creativity, and the ability to lead and inspire a team in a fast-paced environment.
Key Responsibilities:
Menu Development: Design and develop innovative menus that reflect the restaurant's concept and seasonal ingredients. Ensure that all dishes are prepared with the highest quality and consistency.
Kitchen Management: Oversee all aspects of kitchen operations, including food preparation, cooking, and plating. Ensure that all kitchen staff adhere to food safety and sanitation standards.
Staff Supervision: Lead, mentor, and train kitchen staff to ensure a cohesive and efficient team. Manage scheduling, performance evaluations, and provide ongoing professional development.
Inventory & Cost Control: Manage inventory, order supplies, and control food costs to ensure profitability. Work closely with the procurement team to source the best quality ingredients.
Quality Assurance: Maintain the highest standards of food quality, taste, and presentation. Conduct regular inspections to ensure that all dishes meet the restaurant's standards.
Collaboration: Work closely with the Executive Chef, back-of house team, front-of-house team, and management to create a seamless dining experience for guests. Participate in meetings and contribute to the overall success of the restaurant.
Guest Interaction: Occasionally interact with guests to gather feedback and ensure their satisfaction with the dining experience.
Innovation: Stay updated on culinary trends and continuously explore new techniques and ingredients to keep the menu fresh and exciting.
Qualifications:
Proven experience as a Chef de Cuisine or similar role in a fine-dining environment.
Culinary degree or equivalent professional experience.
Extensive knowledge of culinary techniques, kitchen equipment, and food safety standards.
Strong leadership and team management skills.
Creative and innovative approach to menu development.
Excellent organizational and time management abilities.
Ability to work under pressure and handle high-volume service periods.
Exceptional attention to detail and commitment to excellence.
Strong communication skills, both verbal and written.
Physical Requirements:
Flexibility to work on location evenings, weekends, and holidays.
Mobility to move about the kitchen as necessary.
