Full Time Pastry Chef
Join our amazing Dataw Island Club Team as a full time Pastry Chef!
Our Club has three dining outlets. There is a free standing deli operation near the pool, golf and tennis amenities and two restaurant concepts inside the clubhouse; the Pub and the Grill. There is a well-equipped and spacious air conditioned kitchen with an a la carte line and a separate banquet line. The beautifully renovated Pub and Grill have dining outlets that enjoy panoramic views of the golf course, croquet lawns and tidal marsh. There is also an outdoor terrace with a fireplace that also services the membership’s dining needs. These dining areas represent as fine a dining ambiance as there is in the Lowcountry.
Banquet facilities include a 5,000-square-foot Carolina Ballroom which accommodates up to 250 guests for a grand affair, while our more intimate Tabby Room can serve an occasion for 50.
Job Summary
Responsible for all pastry production for dining outlets. Develop pastry-related recipes and ingredient purchase specifications. Decorate pastry items for special events such as buffets and receptions. Assist in budget development and monitoring for bakery. Maintain the highest professional food quality and sanitation standards.
Job Tasks/Duties
- Plans, prepares and decorates special pastry items as necessary.
- Approves the requisition of all products and supplies needed for the bakery.
- Ensures that high standards of sanitation and cleanliness are always maintained throughout the bake shop.
- Establishes controls to minimize food and supply waste and theft.
- Develops Bake Shop recipes and techniques for pastry production that help to assure consistent high quality; exercises portion control over bake shop items.
- Consults with the Banquet Chef about pastry-related aspects of special events being planned.
- Evaluates Bake Shop products to assure that quality standards are consistently attained.
- Prepares all baked goods, puddings, gelatins, frozen desserts, stewed and baked fruits, pies, cakes, pastries, icings, custards, fondants and fillings used in desserts.
- Oversees pastry cart and buffet dessert table setup and presentation.
- Understands and consistently follows proper sanitation practices including those for personal hygiene.
- Performs other tasks as assigned by the Executive Chef.
Education and/or Experience
- High School graduate or GED.
- Certificate or diploma from a recognized bakery and pastry culinary arts training or degree program.
- At least three years of experience as a pastry chef in a club, hotel, or restaurant preferred.
- Knowledge of pastry production principles.
- Cake and other pastry decoration skills.
- Attention to detail, knowledge of ingredients and an aesthetic/artistic eye.
Reports to: Executive Chef
Job Type: Full-time
Pay: $20.00 - $24.00 per hour
Expected hours: 40 per week
