Daughters of Charity in Emmitsburg, Maryland is seeking a full-time Dietary Supervisor.
SUMMARY OF POSITION
Supervises day-to-day operations of assigned shift. Ensures that all dining service needs for all Sisters are met for meals within assigned shift, including any special diets and nourishments. Ensures scheduled staff are on the job, on time and performing their prescribed job duties in a satisfactory manner. Has good knowledge of daily kitchen operations and tools including any special function. Assists in their implementation of these special functions.
ESSENTIAL FUNCTIONS
Supervision of cooks, dietary, and utility staff, includes maintaining and applying (when necessary) the proper disciplinary procedures according to the DOC policy and procedure manual. Has sound knowledge of all kitchen job descriptions and supervises scheduled staff to carry out all aspects of prescribed duties.
Ensures the Sisters' meal tickets are in order and ready for next meal. Ensures accuracy of meal tickets. It is the ultimate responsibility of the shift supervisor to ensure dining services accuracy and effectiveness. Ensures that the dining area is prepared, and each meal is served on time.
Ensures that all scheduled employees are on the job, if callouts occur, replacements are called as soon as possible. Supervisor will fill in and assist whenever there are employee shortages or whenever necessary to ensure: total menu production, set-up, serving, delivery, retrieving, and that all aspects of shift duties are fulfilled to a high standard.
Ensures that all dining rooms are maintained in a prescribed manner including all aspects of sanitation, re-stocking, and any special requests.
Sets up all special function requests, ensuring proper table set-up and supplies provided. Ensures delivery of product is on time and attractively served. Maintains/ensures sanitation procedures are followed and adhered to by all dining services employees.
Ensures that the dish machine is in proper operating order, all chemicals and dispensers are functioning properly, and wash and rinse cycle temperatures are correct and properly recorded in dish machine temperature log.
Ensures that all refrigerators/freezers are operating properly at correct temperatures and temperatures are logged per each shift. Ensures that all other kitchen equipment is functioning properly. If malfunctions occur, notification of the cook, manager, or maintenance is made as soon as possible. Records dish machine temperatures and sanitizer concentrations in the 3-compartment sink, daily. Conducts daily sanitation/safety inspections.
Maintains dietary supervisor's office in a neat and organized manner.
Performs any other duties as assigned. Exhibits service-oriented behaviors and actions to help provide a pleasant and supportive environment for those served.

Manages performance of staff in a pro-active and constructive manner.
PHYSICAL DEMANDS AND WORK ENVIRONMENT
Must be able to endure at least eight hours continuous work requiring physical demands including but not limited to standing, walking, climbing, stooping, bending stretching, pushing, pulling, and lifting.
Must know how to operate and care for equipment and be alert to hazards.
Must be knowledgeable in the areas of diets, food products, and menu planning; must be able to follow recipes and know how to measure ingredients precisely.
Must possess highly organized skills and be able to work well under pressures; i.e. provide three meals (of various nutritional needs) daily on a strict schedule.
Must be able to work well with others and be able to follow and communicate detailed instructions.
Must stay abreast of all rules and regulations governing institutional food service.

EDUCATION AND EXPERIENCE
High School Degree or GED preferred.
Two or more years of supervisory experience in a food service-related field.
Demonstrated supervisory skills that foster a positive, team work environment.

Hourly rate is $23.50.
