Miami will be located in the reimagined Newport Beachside Hotel and Resort, which will relaunch as The Sunny, Miami’s new premier beachside retreat opening in April 2025.. ¡VIVA! We are looking for an exceptional Executive Chef to lead our kitchen team and bring our visionary culinary concepts to life.
As the Executive Chef of ¡VIVA! Miami, you will be the heart and soul of our kitchen, driving the culinary direction and ensuring the highest standards of quality and creativity. You will lead a talented team of chefs and kitchen staff, curating menus that celebrate the rich, diverse flavors of Miami while infusing Chef Ray Garcia's signature style. Your passion, leadership, and innovative approach will be pivotal in creating unforgettable dining experiences for our guests.
The future Sunny, in the heart of Sunny Isles Beach, is poised to redefine the beach getaway experience, offering a perfect blend of rich history and unparalleled amenities. The resort will feature 339 spacious guest rooms, an eclectic private art collection, six food and beverage outlets, a fitness center, spa & salon, oceanfront pool with tiki bar and fire pits, beach club, and over 22,000 square feet of event space, including a unique oceanfront terrace.
What you will be doing:
- Creative Menu Development: Design and execute a dynamic, seasonal menu that reflects the vibrant culinary spirit of Miami and the innovative touch of Chef Ray Garcia.
- Leadership & Team Management: Inspire, train, and lead a dedicated team of chefs and kitchen staff, fostering a collaborative and high-performing work environment.
- Quality Control: Maintain the highest standards of food quality, presentation, and consistency, ensuring every dish served meets our exceptional standards.
- Operational Excellence: Oversee kitchen operations, including inventory management, cost control, and compliance with health and safety regulations.
- Guest Experience: Engage with guests to understand their preferences and feedback, continuously refining our offerings to exceed their expectations.
- Collaboration: Work closely with the restaurant management team to align culinary offerings with overall restaurant vision and marketing strategies.
What you bring to the table:
- Proven experience as an Executive Chef or similar leadership role in a high-end restaurant or hotel.
- Familiar with cost control measures, ordering, vendor management, invoices, scheduling, hiring, performance management
- Excellent communication skills and leadership qualities: team focused, and people driven
- Degree in Culinary Arts preferred
- A deep passion for culinary arts and a strong understanding of diverse cuisines, particularly Latin and Miami-inspired flavors.
- Exceptional creativity and ability to craft innovative, visually stunning dishes.
- Strong leadership and communication skills, with a track record of developing and motivating kitchen teams.
- Excellent organizational and time management skills.
