What are the responsibilities and job description for the Food and Beverage Director position at Dayton Country Club?
The Food and Beverage Director is responsible for all food and beverage production and service for the club. They supervise the Assistant Food and Beverage Director, Banquet Manager, Bar Manager, Dining Room Manager and supervisors of outlets such as snack bars, halfway houses, etc. They plan, implement, and execute budgets; hires, trains and supervises subordinates and applies relevant marketing principles to ensure Club members’ and guests’ needs are consistently exceeded.
Duties:
· Manages all food and beverage outlets including but not limited to main dining rooms and its porches, men’s and women’s grilles, The Turn window, snack bar, catering and banquet facilities by ensuring that product quality and service standards are met.
· Clearly describes, assigns, and delegates responsibility and authority for the operation of the various food and beverage outlets.
· Ensures a pleasant dining experience in all outlets by collaborating with Executive Chef and Dining Room Manager in the creation of menus and menu pricing.
· Ensures successful operation of a la carte dining, club events, banquets and room rentals through regular communication.
· Maximizes food and beverage sales through marketing including promotions and special events.
· Maintains control costs of all beverage outlets. Estimates product/supply levels. Estimates personnel requirements. Takes corrective action as necessary to assure that budget goals are attained. Proactively seeks out ways to eliminate unnecessary expense. Works with the General Manager/COO to develop an annual beverage plan and budget.
· Manages all front of the house food and beverage staff by recruiting, selecting, hiring, orienting, training, assigning, scheduling, evaluating, supervising performance and carrying out disciplinary action as needed.
· Maintains member/guest’s satisfaction and employee productivity by handling customer inquiries, concerns or comments and providing solutions. Acquires feedback from member, guests, and staff to ensure satisfaction and/or implement service improvements. Develops new concepts to encourage repeat business.
· Protects the club, its members and guests by adhering to all safety, sanitation, and alcohol beverage control policies. Participates in on-going facility inspections to assure that cleanliness, safety and other standards are consistently attained.
· Communicates effectively by attending and participating in weekly Managers' meetings. Conducts a weekly food and beverage meeting. Holds regular department meetings with food and beverage staff.
· Serves as an ad-hoc member of the House Committee.
Requirements:
Associate or Bachelor Degree in business administration, hospitality management, or related field of study from an accredited college or university. Three to five years’ experience in food and beverage management. Professional certifications or designations in the country club and/or hospitality profession.
