Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.
Strong financial understanding of forecasting, food cost management, purchasing, inventory and labor management.
Ability to lead and engage a culinary team, with exceptional human resource and supervisory/management skillset.
Computer skills and knowledge of MS Office products including Excel.

Preferred Qualifications
Five (5) years or more of culinary/kitchen management experience.

Responsible for developing and implementing culinary solutions to meet the needs of
employees, students and guests for on-campus catering functions and responsible for the oversight and management of the Viking Catering program and Viking Café areas.
Job Duty
Oversee and manage catering food purchases for timely deliveries/pick-up and food quality and
help manage the preparation and production of food, setting up workstations with all needed ingredients and cooking equipment for catering events and dining areas, as needed.

Assists with food cost control, menu planning, purchasing, and ensures food quality guidelines are followed and assists with planning and creating menus for Viking Catering and produces and executes catering events.
Job Duty
Selects and develops recipes and standardize production recipes to ensure consistent quality and responsible for training of kitchen and catering staff in appropriate food preparation, operation of equipment, food safety and sanitation and completes and applies daily production worksheets and waste log sheets. Tastes completed meals to ensure quality.

Complies with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits and participates and attends departmental meetings, staff development, and professional programs, as appropriate.
