Job Summary:
The Nutrition Director is responsible for overseeing the meal planning, preparation, and service for approximately 100 inmates, ensuring compliance with nutritional guidelines, food safety standards, and budgetary constraints. This role includes managing inventory, portion control, staffing, scheduling, and ensuring meals meet state and federal dietary regulations.
Key Responsibilities:Food Service Management:
- Plan and oversee the preparation of three nutritionally balanced meals per day for inmates.
- Ensure all meals adhere to dietary regulations, including special dietary needs and medical restrictions.
- Maintain proper portion control to meet nutritional guidelines and budget requirements.
Inventory & Budgeting:
- Monitor food inventory, ordering supplies as needed to prevent shortages while minimizing waste.
- Maintain accurate records of food stock, purchases, and meal costs.
- Work within the allocated budget to optimize meal planning and procurement.
Compliance & Safety:
- Ensure all food handling, storage, and preparation meet health, safety, and sanitation standards.
- Comply with local, state, and federal regulations regarding food service in a correctional facility.
- Conduct routine inspections of the kitchen and storage areas to uphold cleanliness and safety standards.
Staff Management & Scheduling:
- Recruit, train, and supervise food service staff, including inmate workers if applicable.
- Develop work schedules to ensure adequate kitchen coverage and efficient meal service.
- Enforce policies and procedures to maintain security and order within the kitchen.
Reporting & Documentation:
- Maintain records of meals served, inventory levels, and staffing schedules.
- Prepare reports as required by the facility administration regarding food service operations.
Qualifications:
- Previous experience in food service management, preferably in a correctional or institutional setting.
- Knowledge of dietary regulations, food safety standards, and portion control.
- Strong leadership and organizational skills.
- Ability to manage inventory, budgets, and staffing effectively.
- Understanding of security protocols within a correctional environment.
- ServSafe or similar food safety certification (preferred).
Work Environment:
- Fast-paced kitchen environment within a secure correctional facility.
- May require standing for long periods and lifting up to 50 lbs.
- Interaction with inmates under supervision may be required.
