We are currently seeking an experienced Corporate Food & Beverage Operational Manager to be responsible for the direction and support of the Food & Beverage operations of Xanterra’s National Parks and Gateway properties. This role will ensure that service standards are being met by supporting the streamlining of F&B procedures while driving the mission to exceed guest expectations.  This role will manage and support continuous improvements for all aspects of Xanterra’s F&B operations and related business functions in its Parks and Resorts businesses. This position will support driving a service excellence culture through focused training & development of management and front-line teams, as well as driving the standardization of practices, processes and procedures using an analytical and operational mindset.  This role requires an experienced and polished communicator for interacting with field operations leaders, supply chain staff, corporate leadership, cross-functional property teams & stakeholders. 


Responsibilities

  • Supports the departmental Senior Director in managing the P&L and budgeted financial performance.
  • Provides subject matter expertise, support and direction of Food & Beverage operations for the Parks and Resorts portfolio.
  • Responsible for food and beverage business outcomes for assigned National Park foodservice operations, including Employee Dining Rooms (EDR’s).
  • Involved with creation of Strategy, Planning and Performance standards and guidelines, working closely with corporate and field operations teams in their partnership and achievement.
  • Maintains the analytics driven culture in F&B utilizing the metrics systems and tools for standardization across our properties; including sales mix, menu engineering, purchasing compliance, staffing, training, as well as guest and employee satisfaction initiatives.
  • Supports creation of new and, evolves existing, training and development plans for operational excellence, business optimization, talent engagement, retention and succession in BOH & FOH operations.
  • Introduces and promotes systemization of consistent service standards and measurements across all outlets and service styles.
  • Enforces food safety and cleanliness standards and monitors prep and production activities for maximum effectiveness.
  • Reviews and acts upon Guest Service scores and feedback, drives a culture of excellence in Guest Service.
  • Involved with new builds, retrofits, equipment specifications and replacement programs.
  • Proposes innovations to leverage current and future technologies to improve efficiency and effectiveness.
  • Introduce and support change management for new systems and programs to build Culinary and F&B Management expertise and measurable talent retention.

Qualifications

  • Bachelor’s Degree in Hotel & Restaurant Management, Hospitality Management, Culinary Management, related Business Degree, or equivalent work experience.
  • At least 5 years of high-volume multi-unit Food and Beverage management experience in the Resort/Hotel and/or Concessions industry.
  • Requires solid financial and administrative background with excellent time management and problem resolution skills.
  • Excellent hospitality experience in building, developing and activating new and creative scalable Food & Beverage concepts and experiences.

 TRAVEL REQUIRED: Significant Travel required (at least 50%) during peak summer operating months.

COMPENSATION:  The salary range for this position is $70,000.00 - $90,000.00.
