- Prepare food daily as outlined on the weekly menu plan provided by dietician.
- Assist with menu planning; review and adjust menus with supervisor to accommodate foods in season, vendor sale prices, special events and holidays.
- Alter or adapt recipes to accommodate special dietary needs of residents or to improve recipes.
- Identify adaptive equipment or altered food preparation procedures to assist residents in maintaining an independent eating function.
- Adjust menus to utilize foods in the refrigerator and freezer to prevent waste and spoilage.
- Monitor portion control to meet residents’ requests and meet basic nutritional requirements.
- Ensure attractive presentation of food on the plate before serving.
- Maintain portion control to meet budgetary requirements.
- Assist with planning menus and preparation of foods for special events.
- Ensure proper handling, labeling, and storage of all delivered foods and ingredients for infection control.
- Establish and oversee cleaning schedule for all dishware, pots and pans, equipment, appliances, floors drains, storage area, refrigerator, freezer, and sinks.
- Maintain a written inventory of dry goods, refrigerated and frozen foods, non-food supplies, dishes and utensils.
- Notify Maintenance Director of malfunction of equipment or appliances.
- Work with team to ensure efficient operation of the community.
- Operate food service department within guidelines of community budget.
- Maintain high level of resident satisfaction in food service department.
- Encourage and invite residents to participate in the food service program.
- Coordinate and assign work to team members involved in the food service program.
- Interview and recommend staff to Executive Chef/Dining Director. Train, supervise, and assign work to new food service employees.
- Implement and ensure compliance with corporate policies and procedures in the food service department
- Participate in marketing the community by providing high quality customer service and preparing marketing meals, as needed.
- Report any on-the-job injuries to the supervisor before the end of the work shift on the day the injury occurs.
- Maintain confidentiality of verbal and written information pertaining to residents, community operations and personnel.
- Other duties as assigned.
- High school diploma or GED
- Experience in volume food production within a commercial kitchen
- Promote teamwork in providing services to residents.
- State food-handling and kitchen regulations
- Operation of kitchen appliances (dishwasher, garbage disposal, microwave, coffee maker, ice machine, blender, food processor, meat slicer, mixer, etc.) and office equipment (FAX, photocopier, telephone)
- Knowledge and conformity to state and local food code and health code regulations with an overall keen sense of sanitation and food safety
- Experience in supervision is preferred.
- Certificate or degree in food service is preferred.
