- Small plates (4-6 items) highlighting vibrant flavors and unexpected combinations.
- Pasta dishes (2-3 options) crafted with care and creativity.
- Large plates (3-5 offerings) showcasing bold yet refined culinary techniques.
- Desserts (2-3 selections) offering a sweet finish with sophistication (we have a pastry chef)

Position Overview: As Chef de Cuisine, you will play a pivotal role in defining the culinary identity of dohō. This is an opportunity to lead with creativity and innovation while fostering a collaborative and respectful kitchen culture.
Key Responsibilities:
- Work closely with the Executive Chef to create menus, develop recipes, and test recipes.
- Collaborate with local purveyors and farmers to source high-quality, sustainable ingredients.
- Hire, train, and build a strong and cohesive culinary team.
- Manage kitchen operations, including hiring, training, and mentoring staff.
- Oversee inventory, purchasing, and cost control to ensure profitability.
- Maintain high standards of cleanliness, organization, and food safety.
- Provide an exceptional dining experience for our guests.
Qualifications:
- Proven experience as a Sous Chef or Chef de Cuisine in a high-quality, fine dining restaurant.
- Micheline or Beard Awarder restaurant experience preferred.
- Strong background in fine dining with an emphasis on French techniques.
- Expertise in modern American cuisine with global influences.
