At Dollywood Parks & Resorts, we create memories worth repeating. We do this every day across Dollywood Resorts which includes over 600 rooms and 15 Food & Beverage outlets, all located in the Great Smoky Mountains of East Tennessee. Our plan is to grow our resort footprint to over 1200 rooms across five resorts at Dollywood and to add other resorts to our overall company resort portfolio.

We are seeking a Resort F&B Purchasing Manager who will embody the heart and soul of our mission of creating memories worth repeating while caring deeply about our brand and our region.

We are seeking an individual who has the ability to bring the vision of the Dollywood Resorts to life. The recipe for the right Resort F&B Purchasing Manager will be equal parts curious learner, innovator, administrator, mentor and motivator.

To provide positive support for our culinary and food and beverage team by managing and creating purchasing processes for our kitchens and food outlets. Work as an integral part of the Food and Beverage Division to ensure both guest and financial expectations are menu.


Summary of Essential Functions & Responsibilities


  • Oversee inventory and supply chain management according to company policies and procedures for HeartSong Resort & Lodge and DreamMore Resort & Spa.
  • Review and submit orders to vendors for all needed food items, alcoholic beverages, divisional operating supplies and equipment.
  • Development and implementation of standard operating procedures for internal inventory control and purchasing processes.
  • Manage departmental checkbooks for each resort to ensure purchases align with budgeted expectations.
  • Supervise and provide direction to Receiving Clerks on completing their assigned duties in the time allotted.
  • Supervise and provide direction to Inventory Control Clerk on completing their assigned duties in the time allotted.
  • Oversee internal processes involving requisitions, transfers, returns, and reconciling of all invoices; including research and resolution of outstanding balances and credits.
  • Develop and implement product par levels that are maintained by Home Business Units.
  • Review documentation and monitor product codes to search for discrepancies; troubleshoot quantity discrepancies between stock and records.
  • Maintains and leads efforts for property adherence in the use of CrunchTime.
  • Review CrunchTime for discrepancies and make corrections as needed.
  • Update price corrections within the inventory system.
  • Collect and analyze data to forecast appropriate order quantities.
  • Research and recommend cost savings.
  • Ensure storerooms are organized and clean in adherence with all safety regulations.
  • Assists Food and Beverage leadership in entering HotSoS maintenance repair tickets and or cleaning requests for all Store Room Areas.
  • Verify and record temperatures of perishable items in areas of responsibility; maintain HACCP log.
  • Print weekly and monthly order guides and inventory forms.
  • Maintains effective communication by providing: direction, coaching, mentoring, correction, training, support and development of the storeroom staff through timely and specific feedback and recognition.
  • Provides final physical period ending inventory calculations to accounting and F&B leadership.

Education and Experience Required

  • Must be a minimum of 21 years of age.
  • High School Degree or equivalent required; bachelor’s degree in Supply Chain, Hospitality Management or 2-year Accounting degree preferred.
  • Minimum of five years food and beverage inventory management experience in hotel or high-volume restaurant environment required.
  • High proficiency in Excel; working knowledge of all Microsoft Office software; experience with inventory and financial software.
  • Advanced skills tracking progress of multiple requests and small details.
  • Exceptional proven communication skills - written and verbal.

  • Able to operate/drive a company vehicle with valid TN driver’s license and insurance.

  • Must be able to lift items that weigh up to 50 lbs.
  • Must be comfortable working in coolers and freezers.
  • Must be available to commit to work any days of the week including holidays and shifts as early as 5:00 am.
