Job Description
The Bakery Assistant Manager supports the Bakery Manager in overseeing the production of bread products for an Eataly location, including but not limited to: breads, pizza alla pala, rolls, focaccia and seasonal items. Reports to the Bakery Manager and assists with managing the bakery team in a 24-hour operating bakery.
- Prepares bread products for restaurant and retail operations in accordance with Eataly’s authentic Italian recipes and quality standards
- Assists the Bakery Manager with leading, directing, training and developing bakery team members, following prescribed training programs
- Maintains and nurtures natural yeast, local and organic flour, and naturally leavened products
- Orders ingredients and supplies for the bakery and its related areas
- Communicates with management outside of the bakery in the absence of the Bakery Manager
- Collaborates with Bakery Manager to oversee Front of House retail and Quick Service bakery operations
- Completes administrative duties when required, including: ordering, scheduling, assessing financial information, budget monitoring and inventory
- Maintains a clean and sanitary food production area according to Department of Health standards
- Documents, investigates, elevates and resolves all employee and guest incidents
- Performs other duties as required or assigned
Qualifications
- 3 years of experience in baking production and mastery of related techniques
- Experience operating a wood burning oven
- Excellent time management and communication skills
- Previous managerial experience highly preferred
- Degree from a post-secondary culinary program highly preferred
Job Requirements
- Availability to work onsite and manage a 24-hour operating team: flexible, open schedule often including evenings, overnight, weekends and holidays
- Ability to work in excess of 40 hours per week when needed
- Ability to lift up to 50 pounds
- Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
- Ability to work with a wood burning oven, electric pizza convection oven and commercial spiral mixer
- Bilingual preferred
