Job Description

A Lead Prep Cook transforms high-quality, unique ingredients into authentic Italian dishes through preparing, cooking and plating food items in Eataly’s exciting, high-volume, open kitchens while overseeing other prep cooks. Reports to the Sous Chef Manager and Chef de Cuisine.

• Oversees other prep cooks and ensures performance standards during service
• Responsible for portioning, cutting, measuring, frying, baking, sautéing, grilling, and all related culinary tasks
• Identify and break down cuts of meat, fish, pork, and lamb, additionally responsible for product ID and proper storage and FIFO of fresh products
• Must be experienced in batch cooking and recipe scaling
• Follows recipes and complies with portion sizes, quality standards, department rules and procedures, and Department of Health regulations
• Performs other duties as required or assigned

Qualifications

• 2 years in a food preparation position
• Excellent communication skills
• Degree from a culinary arts training program preferred

Job Requirements

• Availability to work onsite with a flexible schedule often including evenings, weekends and holidays
• Ability to lift up to 50 pounds
• Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
• Good knife skills and finger dexterity to use small tools and utensils adeptly

Additional Information

Compensation for this role ranges from $20.00 to $24.00 an hour.
