Position Description :
Perform duties to ensure proper cook and chill methods are conducted in accordance with product specification and USDA regulations.
Primary Responsibilities :
- Prepare cook or chill tanks by filling and setting temperatures
- Prepare dollies for cook process
- Monitor tank water levels, temperatures, and equipment performance throughout the cook / chill processes, making adjustments as needed
- Record product and cook information on appropriate forms or enter into computer system
- Select appropriate recipe programs in computer system
- Pull racks of product and move to next phase of process
- Conduct hand probe temperature readings on cooked product
- Maintain safe and clean work environment by complying with employee and food safety procedures, rules, and regulations
- Operate jeep / walker for the movement of product
- Complies with and adheres to all employee safety and food safety programs
- Perform other duties as assigned
