General Description
Lead lab functions, formulate meat recipes, monitor meat ingredient performance, lot controls,manage raw material inventory use, and back up wet side as needed.
- Lead daily lab functions
- Oversee product testing and result reporting
- Least cost meat formulations in Opti software
- Standard production runs per schedule
- Project meat purchase needs per standard production run
- Manage lot number control issued to kitchen production
- Manage raw material inventory use utilizing FIFO
- Maintain raw material performance for each supplier
- Chemical and glassware inventory
- Report filing and record retention
- Notify Meat Buyer of raw material spec deviations
- Generate reports as needed by FSQA Director/Lab Manager
- Keep work area clean and organized
- Report any unusual and/or unacceptable observations to Lab Manager
- Other possible duties added as needed by Management
· High school diploma or general education degree (GED); or up to six months of related experience and/or training; or equivalent combination of education and experience.
· Ability to read and comprehend simple instructions, short correspondence, and memos written in English.
· Ability to write simple correspondence in English.
· Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.
· Ability to add, subtract, multiply, and divide into all units of measure, using whole numbers, common fractions, and decimals. Ability to solve mathematical equations involving ruler readings, percentages, averages, rounding, and conversion of grams, pounds, and ounces.
Physical Demands/Work Environment
· While performing the duties of this Job, the employee is regularly required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms; stoop, kneel, crouch, or crawl and talk or hear.
· The employee must occasionally lift and/or move up to 20 pounds.
· While performing the duties of this Job, the employee is regularly exposed to wet and/or humid conditions; moving mechanical parts; fumes or airborne particles, and extreme cold.
· The noise level in the work environment is usually loud.
