About This Career Opportunity
The Assistant Culinary Director:
- Supervises specification standards for all food and supplies to guarantee the highest quality at the most competitive prices.
- Manages the quality and quantity of food and the preparation process, ensuring that meals are cooked correctly and served promptly.
- Accountable for supply management by maintaining optimal levels of food inventory and supplies in accordance with budgetary guidelines.
- Ensures precise preparation, utilization, timely completion, and documentation of all necessary production records.
- Establishes and enforces sanitation schedules for production areas.
- Prepares work schedules, assists with payroll, and conducts performance evaluations for direct reports (cooks, prep cooks, and dishwashers), as well as participating in the hiring and counseling of staff alongside the Culinary Services Director.
Overview
The Assistant Culinary Director is responsible for planning, overseeing, and training the back-of-house team in compliance with health and safety standards. This role involves guiding the cooks in the preparation of all menu items while actively participating in the cooking process.
The Assistant Culinary Director addresses residents' nutritional needs, preferences, and any complaints related to menu offerings. They possess a comprehensive understanding of food service requirements and dietary considerations. Proactively identifying and resolving potential issues is a key aspect of this position.
The Assistant Culinary Director manages supply orders within budget constraints and ensures proper receipt upon delivery. Additionally, they conduct inventory checks, create work schedules, assist with payroll, and evaluate the performance of direct reports, including cooks, prep cooks, and dishwashers. This role also involves hiring and providing guidance to staff in collaboration with the Culinary Services Director, as well as assisting with assigned administrative tasks.
Responsibilities
- Oversees, organizes, and instructs the back-of-house team in compliance with health and safety standards to adhere to licensing requirements regarding nutrition and portion sizes. Manages the provision of three daily meals, along with snacks and nutritional supplements for all residents.
- Develops and implements specialized diets tailored to the needs of residents. Plans and coordinates food services for special events and activities.
- Responsible for ordering supplies and procuring all food items, including raw ingredients, dairy products, meats, bakery goods, and other consumables utilized in the kitchen.
- Oversees the check-in process for food deliveries, maintains a weekly inventory of food supplies to ensure compliance with budgetary goals, and regularly evaluates the quality of purchased items.
- Ensures the precise and prompt completion and submission of all necessary production records and documentation related to food storage and handling.
- Trains team members to operate in accordance with established guidelines and to comply with standards and licensing regulations.
- Oversees sanitation protocols for production zones, equipment, and the overall kitchen environment.
- Supervises the safety program to guarantee suitable working conditions and the correct utilization of equipment.
- Instruct staff on the operation and management of kitchen equipment and supplies.
- Offers oversight to the food service department, which includes recruitment, training, and assessment of kitchen and dining room personnel.
- Acts as a manager in overseeing general operations functions and substitutes for the CSD when required at meetings and activities.
Qualifications – Position Requirements
- At least 18 years of age.
- Cleared Criminal Record clearance through the Department of Social Services prior to presence in the community.
- Health screening and TB test results not older than 6 months.
- Current First Aid Training and Certifications as per Title 22.
- Skilled in utilizing MS Office applications
- A culinary degree or comparable experience is required.
- A minimum of five years of experience in institutional food preparation and service, along with two years of supervisory experience, is required.
- Must hold a valid Serve Safe Certification and First Aid Certification.
- Familiarity with Title 22, Division 6, Chapter 8 is essential.
- Works beyond normal business hours, weekends, holidays and severe weather situations when necessary.
Skills and Attributes

- Ability to identify need, develop, and manage programs and systems simultaneously.
- Knowledge about dementia is highly desirable.
- Excellent written and verbal communication skills.
