Duties and responsibilities of Wait Staff Members
Our wait Staff is our “Our Face to the Public”. In being so, our wait staff must be the most intuitive members of our staff. The wait staff is going to “touch” all drinks and food our customers have in this establishment. This position is a salesperson, an explainer, a consoler, and an expert. Our success is going to be determined by the personality of our wait staff. In saying this, our responsibility to the wait staff is going to be paramount to ensure our collective success.
1.) The Wait Staff is our front line to excellent customer service. To ensure this the Wait Staff should ensure they are “Ready” to be in the customer's eye. This means they are going to be clean, in proper clothing, and must take time to read and understand the menu, kitchen specials, and drink specials served in the establishment. To this end, they must be able to be coached from the Host/Hostess, bartender, and kitchen staff.
2.) The wait Staff must come in Ready to work and sober. If the manager feels that the wait Staff member is not presentable, the member must make appropriate changes to be presentable to the public. If there is a conflict, this should be brought to the GM for advisement.
3.) Upon clocking in the Wait Staff member will get updates on menu changes, specials and reservations. At that time the wait Staff member will do a check of their assigned area of responsibility to and do any side work needed to do prior to opening.
4.) It is important to greet every customer in a courteous manner, be friendly and accommodating. Make sure that all customers have water served upon seating, explain the daily specials from the kitchen and the bar, and menus are passed out to each customer.
5.) While the customers are looking at the menu, you should suggest pairings, and how the menu items pair with the wines served. This is the time for you to sell your customers items that you like and why you like them. You should never say that there is an item you don’t like. You should be trained to avoid these situations, but if you have a situation that you are not comfortable with call the Host/Hostess or GM for assistance.
6.) When the order is being placed, repeat back to the customer what is being ordered and then send the order to the kitchen or bar.
7.) Upon completion of your customer’s evening, print the sales receipt and present it to your customer. Make sure the customer gets a copy of the receipt and always thank them for their patronage.
8.) At the end of the service day, ensure that your station is cleaned and ready for the next day. Do all side work assigned to you and cash out with the Host/Hostess. If necessary, tip out your bus help or bartender*. If you have been cleared by the GM, you can clock out and vacate the premises.
