The Cook III prepares, seasons, and cooks food items for consumption at restaurants and/or in-room dining. Butchers chicken, beef, fish and shellfish. All duties are to be performed within the guidelines of Hotel Drover policies and procedures, Internal Control Standards, and objectives.
ESSENTIAL RESPONSIBILITIES:

Ability to manage multiple projects/priorities and deliver results in a demanding, fast-paced environment

Build and maintain relationships with all stakeholders while acting as an extension of the Hotel Drover brand
-
Analyze recipes to assign prices to menu items, based on food, labor, and overhead costs.
-
Check the quality of raw and cooked food products to ensure that standards are met.
-
Check the quantity and quality of received products.

Collaborate with other personnel to plan and develop recipes and menus, considering such factors as seasonal availability of ingredients and the likely number of customers.

Demonstrate new cooking techniques and equipment to cooks.

Ensure completion & accuracy of daily logs including Refrigeration, Hot/Cold Holding Temps, Waste, & relevant FSS sheets.

Monitor sanitation practices to ensure that Team Members follow all standards and regulations.

Confirm that all recipes and product yields are accurately costed and reviewed regularly.

Ensure that all food items are prepared as per standard recipe whilst maintaining portion control and minimizing waste.

Check out each cook at the end of the shift to ensure stations are closed properly.

Determine, assign, and ensure completion of daily Prep Lists and Side Work.

Ensure that food stock levels within each area are of sufficient quantity and quality in relevance to the forecasted business volumes.

Ensure that all food prep equipment is being used safely and is properly cleaned and maintained.

Be aware of new items introduced onto the market and keep up with the latest product trends.

Initiate relevant maintenance reports and work orders supported by the respective follow-up of those items actioned.

Complete pre-opening line checks to ensure sanitizer buckets, towels, and tasting spoons are available and in use, trash cans are emptied, and prep areas are swept, cleaned & sanitized.

Project a positive and motivated attitude amongst all Team Members.

Frequently verify that only the highest quality products are used in food preparation.

Ensure that all food products, perishable and dry, received into the venue are of the required standard and quality and that they are stored and rotated correctly.

To delegate responsibilities to subordinates as required.

Identify strengths and weaknesses and provide timely feedback to the individual, ensuring Team Members are cross-trained progressively through stations

Assist in setting the entire line prior to opening.

May be required to assist with any other duties that may be outside the scope of responsibility

Qualifications
QUALIFICATIONS:

High School diploma, GED, or equivalent required

Two (2) year Culinary Arts Degree preferred or practical experience equivalent

Experience in a high-volume, free-standing restaurant, large hotel, casino, or resort required

Thorough understanding of various cooking methods including production and execution

Proven ability to reduce food costs
-
Must be able to demonstrate and deliver a high level of service to our guests

Has strong verbal and written communication skills
-
Has ability to lead and develop a cohesive culinary team
-
Can interface effectively with FOH staff to produce a positive guest experience
-
Must have a valid current Food Handlers Card or willingness and ability to obtain one within 30 days of employment.

Must know all applicable health standards.

Must maintain a clean appearance and professional demeanor.

The team member is required to perform all necessary duties of the job. The team member must regularly lift and/or move up to 10-25 pounds and frequently lift and/or move up to 50 pound
