The ideal candidate will have experience working in a fast-paced, high-demand environment, with a strong focus on delivering exceptional food and customer service for the onsite restaurant, wedding parties, special events, and lodge guests.

Create and maintain a customer service driven food and beverage operation. Develop menu items and recipes that reflect customer preferences and industry trends. Determine pricing levels that will enable attainment of revenue budgets and drive a cost effective operation. Lead, motivate and inspire employees to deliver consistent high quality of product and service, as articulated in the Lodge mission statement. Drive continuous improvement in service quality by defining and improving processes, developing staff and encouraging communication between kitchen, main dining room, bar, sales and banquet departments.
Key Responsibilities
- Establish and maintain food and beverage quality standards at Peak of Otter
- Develop and monitor standard operating procedures for the kitchen that support quality standards.
- Keep abreast of industry trends and use this information to produce new menus twice yearly that reflect changing palates, seasons and availability of ingredients. Use industry trends and historical information to produce Food and Beverage input to overall Lodge marketing and business plan.
- Oversee large banquet functions to assure quality, availability of menu choices, portion control and timeliness of service.
- Provide food service for a variety of Lodge-initiated special events
- Greet and maintain rapport with customers, maintaining a positive image and promoting the Lodge to current and potential customers.
- Maximize the revenue potential of Food and Beverage operations.
Experience
- At least ten years of experience in progressively responsible roles as Chef.
- Experience in a complex resort/banquet facility.
- Experience with purchasing food and supplies and controlling inventory.
- Must be willing to work weekends, holidays and events as needed.
