Canopy by Hilton Deer Valley is located adjacent to the emerging Deer Valley East Village, just steps from the Jordanelle Express Gondola and overlooking the Jordanelle Reservoir. Overview

A Director of Food & Beverage serving Canopy by Hilton is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviors, skills, and values that follow: 

Key Responsibilities

  • Lead all front- and back-of-house F&B operations with a visible, hands-on presence and a “lead from the front” mindset.
  • Forecast revenue, manage budgets, control COGS, and drive profitability across five distinct outlets.
  • Recruit, train, and motivate both seasonal and year-round teams, with the ability to scale operations up or down as needed.
  • Ensure each venue delivers consistent, high-quality service that meets or exceeds Exell and Hilton brand standards.
  • Develop and execute operational plans; analyze product mix and pivot away from underperforming items.
  • Maintain full compliance with Utah DABS regulations; oversee alcohol inventory, comp policy, and purchasing.
  • Lead banquet and event service execution with a focus on precision, adaptability, and guest satisfaction.
  • Manage venue managers and entertainment budgets to align with overall F&B strategy.
  • Stay ahead of market trends through competitive analysis, adjusting pricing and offerings as needed.
  • Provide ownership with regular reporting on performance metrics, strategic initiatives, and opportunities for improvement.
  • Foster a culture of respect, accountability, and continuous learning across the entire F&B team.

 

Qualifications

  • 5–8 years of senior F&B leadership in multi-venue hotel, resort, or high-volume restaurant environments.
  • Prior hotel or resort opening experience required, with the ability to build systems, teams, and culture from the ground up.
  • Proven success managing seasonal operations, including recruiting, onboarding, training, and retraining staff.
  • Demonstrated ability to execute banquet and event services with precision and guest satisfaction.
  • Experienced in rolling out seasonal menu changes and adapting product mix based on performance.
  • Strong financial discipline, manages COGS, labor, forecasting, and delivers detailed reporting.
  • Ability to build and execute marketing plans that support revenue, product mix, and outlet positioning.
  • Deep operational knowledge, including Utah DABS regulations, liquor inventory, and compliance.
  • Skilled at managing venue leads, ensuring consistency and quality across outlets.
  • Technically proficient with POS systems, budgeting tools, Excel, and reporting software.
  • Clear communicator, floor-focused leader, results-driven operator.
  • Education: Bachelor’s Degree
  • Preferred Experience:
    • Luxury/Upper Upscale Lifestyle experience
    • In-depth knowledge of the Park City-Deer Valley market
    • Experience with Hilton brand systems and processes.

  • Ability to adapt and perform in fast-paced, high-pressure environments.
  • Deep understanding of hospitality reporting, compliance, and operational best practices

Technical Skills

  • Proficient in Microsoft Office (Excel, Word, PowerPoint, Teams)
  • Experienced with sales platforms (e.g., Delphi) and property management systems (PMS)
  • Comfortable with industry-relevant reporting and operations software
