This opening will mark the resurgence of luxury nightlife experiences in New York with dynamic food and beverage venues and programming that will make Faena the ultimate destination for the sophisticated traveler to New York.
JOB OVERVIEW
The Chief Steward oversees all back-of-house cleaning operations and sanitation for Faena New York’s culinary and food & beverage outlets. This includes maintaining cleanliness of kitchens, dishwashing, storage, and banquet areas while ensuring compliance with DOH, HACCP, and brand hygiene standards. The Chief Steward leads the stewarding team to deliver efficient support to culinary and service teams with a strong focus on cleanliness, organization, and luxury presentation.
This position has a salary range of $110,000 to 120,000 per year.
DUTIES AND RESPONSIBILITIES
- Lead the daily operations of the stewarding department including scheduling, assignments, and cleanliness audits.
- Ensure consistent and thorough cleaning of kitchen equipment, floors, workspaces, storage, and dish areas.
- Maintain DOH and HACCP standards across all BOH F&B areas and oversee preparation for inspections.
- Supervise the proper use of dish machines, sanitation chemicals, and cleaning supplies.
- Manage inventory and par levels of dishware, flatware, cleaning supplies, and kitchen small wares.
- Coordinate with culinary leadership to ensure readiness for banquets, room service, and event setups.
- Track breakage, loss prevention, and maintain dish and equipment logs.
- Train new stewards and conduct ongoing safety and sanitation training for the team.
- Oversee organization of dish rooms, storage areas, trash disposal, and recyclables.
- Support large-scale cleaning initiatives and deep-cleaning rotations across outlets.
QUALIFICATIONS DESIRED
- Minimum 5 years of experience in stewarding with at least 2 years in a supervisory or leadership role.
- Experience in luxury hotels or high-volume banquet operations preferred.
- Strong knowledge of sanitation protocols, commercial kitchen equipment, and DOH compliance.
- Familiarity with inventory systems, dish machines, and kitchen logistics.
- Ability to lead a diverse team in a fast-paced, high-standard environment.
