Culinary Production Associate - Job Description
Culinary Production Associates are responsible for cutting, trimming, grinding, tying, and otherwise processing meat from larger, wholesale portions into retail-ready cuts such as steaks, roasts, grinds, sausage, etc. They are also responsible for portioning, packing, and labeling in-house produced meat cuts and value-added meat products in preparation for retail sale. In addition, Culinary Production Associates will participate in the production of various other value added products, not limited to meat. The work is physical, fast-paced, and requires a high attention to detail. A successful Culinary Production Associate will maintain the highest standards for quality, cleanliness, food safety measures, and accurate weights and measures. Culinary Production Associates report to the Culinary Director.

About The Job
- Portion and prepare ingredients for use in value-added products
- Portion, pack, and label in-house products
- Cut, debone, grind, tie, and otherwise prepare primal and subprimal cuts of meat into retail and value-added cuts and products
- Maintain food safety and sanitation protocols
- Maintain safe work practices at all times; operate tools and equipment per their intended use
- Clean equipment and work areas to maintain health and sanitation standards
- Store and organize items in the correct warehouse location(s) at the correct temperatures
- Ensure that product labels reflect accurate product names, ingredients, weights, and dates
- Assist with receiving, loading, and storing of incoming ingredients
- Communicate proactively with Culinary Director, Operations Managers, and colleagues
- Other duties as assigned, including but not limited to kitchen sanitation and warehouse maintenance
- Opportunities to assist and learn whole animal butchery
About You
- At least one year professional kitchen experience
- Prefer one year meat cutting experience
- Committed to food safety and knowledgeable about safe meat handling practices
- Good communication skills both verbal and written
- Excellent attention to detail and organizational skills
- Able to lift and carry produce boxes that typically weigh up to 40 lbs
- Comfortable working in cold environments
- Passionate about building a more sustainable and equitable food system for Hawai‘i
- High school degree or equivalent
- Must pass food handling training (paid for by Farm Link)
- Submit TB test results (post-hire)
Compensation and Benefits
Compensation for this position ranges from $19.00 - $23.00 hourly, depending on prior experience. Medical and dental insurance are provided at no cost. Paid time off is provided.
