Job Overview:The Back of House Manager/Head Chef will be responsible for overseeing the entire kitchen operation, including menu planning, food preparation, inventory management, and staff leadership. This role demands a strong culinary background, exceptional leadership skills, and the ability to manage kitchen operations efficiently in a fast-paced environment. The ideal candidate will have a deep passion for Irish cuisine, maintain excellent food quality, and foster a positive and productive kitchen team.
Key Responsibilities:
- Lead and manage the back-of-house team, including chefs, line cooks, and kitchen staff, ensuring efficient and high-quality food production.
- Oversee the preparation and presentation of all dishes, maintaining consistency with the restaurant's standards and menu.
- Create and update the menu, incorporating seasonal ingredients, customer preferences, and traditional Irish recipes.
- Ensure kitchen operations comply with food safety, sanitation, and health regulations.
- Manage inventory and order supplies, ensuring the kitchen is fully stocked and that waste is minimized.
- Control food costs by monitoring portion sizes, inventory, and production levels, ensuring profitability without compromising quality.
- Maintain a clean and organized kitchen, including supervising the proper maintenance of kitchen equipment.
- Train, mentor, and motivate kitchen staff to foster a high-performance, cooperative work environment.
- Collaborate with the Front of House Manager to ensure seamless communication between kitchen and service staff, ensuring timely food delivery and guest satisfaction.
- Handle staffing needs, including scheduling shifts and assisting with hiring new kitchen staff.
- Ensure smooth opening and closing of the kitchen, overseeing all food preparation and cleanliness during each shift.
- Address and resolve any kitchen-related issues or customer complaints in a professional and efficient manner.
Qualifications:
- Minimum of 3-5 years of experience in a professional kitchen environment, with at least 2-3 years in a leadership or head chef role, preferably in an Irish pub or similar restaurant.
- Strong knowledge of Irish cuisine, with the ability to innovate while maintaining traditional flavors.
- Proven ability to lead and manage a team, ensuring efficiency and morale in a high-pressure environment.
- Excellent organizational, multitasking, and time management skills.
- Exceptional knowledge of food safety, sanitation, and kitchen management practices.
- Strong communication skills, with the ability to collaborate with both kitchen and front-of-house teams.
- Ability to control kitchen costs, including food ordering, inventory management, and staff scheduling.

- Ability to work evenings, weekends, and holidays as required.
