ROLE & RESPONSIBILITIES:
We are seeking a skilled and motivated Outdoor Line Cook to join our culinary team. The ideal candidate will be responsible for preparing and cooking meals in an outdoor setting, ensuring high-quality food preparation, maintaining a clean and organized work environment, and adhering to food safety standards. This position requires experience in outdoor cooking methods, strong multitasking abilities, and the ability to work efficiently under varying weather conditions.
- Prepare and cook menu items in an outdoor kitchen, including grilling, smoking, and open-flame cooking.
- Maintain a clean and organized outdoor cooking station in compliance with health and safety regulations.
- Assist with food prep, including cutting, marinating, and seasoning ingredients.
- Monitor grill and cooking temperatures to ensure proper food preparation.
- Work efficiently in a fast-paced environment while maintaining quality and consistency.
- Collaborate with kitchen staff and servers to ensure timely food service.
- Manage inventory, stock supplies, and notify management of any shortages.
- Flexible scheduling based on weather conditions.
- Assist in setting up and breaking down the outdoor cooking area before and after service.
Qualifications
QUALIFICATIONS & EDUCATIONAL REQUIREMENTS:
- Previous experience as a line cook, preferably in an outdoor or high-volume setting.
- Knowledge of grilling and outdoor cooking techniques.
- Ability to work in various weather conditions, including heat and cold.
- Strong understanding of food safety and sanitation guidelines.
- Ability to lift up to 50 lbs and stand for extended periods.
- Excellent time management and organizational skills.
- Ability to work mornings, evenings, weekends, and holidays as needed.
- Strong teamwork and communication skills.
- Culinary degree or certification, preferred.
- Experience with food truck settings, woodfired pizza oven and propane outdoor cooking equipment, preferred.
ADDITIONAL NOTES:
Must possess customer service skills and strong oral communication skills. Competency in dealing with members and fellow employees under circumstances requiring tact and diplomacy. Must possess the ability to work effectively under time deadlines. Proven ability to develop a team. Performs work under minimal supervision. Handles complex issues and problems and refers only the most complex issues to higher-level staff.

Flying Horse Resort & Club complies with Colorado labor laws by providing eligible benefits to part-time and seasonal employees. Under the Colorado Healthy Families and Workplaces Act (HFWA), employees accrue one hour of paid sick leave for every 30 hours worked, up to 48 hours per year. Other legally required benefits, such as workers' compensation and unemployment insurance, also apply. Additionally, we provide a 401(k) retirement plan with an employer match. All benefits are subject to the terms of the applicable plan documents, including eligibility requirements and waiting periods, as required by law.
