Job purpose
Provide hands on supervision of people and processes in the Fabrication area. Emphasizing safety, quality, and efficiency in each area. This role supports FM Meats overall production team as they drive production to the highest safety, quality, and efficiency standards. This position requires work exposure in multiple areas in our refrigerated production environment. Oversees the associates and process in the Fabrication department. Must be able to provide and interpret yield information, measure productivity and efficiency to capture line capacity and complete a daily log.
Duties and responsibilities
Fabrication Responsibilities
- Manages a large team of meat cutters to Debone Beef Carcasses quickly and safely.
- Ensures all production is to correct trim and item specification.
- Work with USDA and QA inspectors to ensure food safety and quality.
- Communicate initiatives and improvements to employees in Harvest and Fabrication.
- Attend the daily morning meetings of supervisors and managers and communicate effectively with production staff.
- Work with Human Resources to ensure staffing levels are met, fostering positive employee relations, employee safety, policy & practice adherence, and employment / labor law compliance.
- Follow specifications for operating and maintaining equipment.
- Trains workers in safe, productive, efficient operation of equipment.
- Manage associate performance through training, coaching, and counseling, the performance improvement program, and evaluations.
- Plans and directs associates in the performing of GMPs, SSOPs, and CCPs for the area.
- Observes color and appearance of meats and feels products to verify quality.
- Performs other duties as described by Plant Manager.
- Ensuring PPE is worn, associated training, compliance with written programs, accident investigation and seeing that any hazards are corrected.
- Must be trained in HACCP and CCP protocol.
- Manages production and labor scheduling to ensure deadlines and quality specifications are met.
- Manages employee timesheets and approves / denies PTO request.
- Supervisor will oversee the accuracy of products that are on the conveyor belt. Oversee the sorting of each item accurately and check for any leakers.
- Provide oversight and direction for the packaging of all products neatly avoiding the mixing of products according to grade.
- Follow a process to return leakers back to baggers for re-packaging.
- Ensure staffing levels are sufficient to prepare boxes for products and ensure the safety of employees by checking for any broken pallets and ensuring the workstation is safe.
- Understands all cut sheets and directs employees to accomplish thorough and beef understanding of every possible beef cut.
