Commissary Manager

Position Overview

We are seeking a Commissary Manager to lead our commissary kitchen operations in Los Angeles. This individual will oversee production, logistics, and team development while maintaining the highest standards of product quality and operational efficiency. The ideal candidate is hands-on, solutions-driven, and highly organized, with a passion for leading a team in a fast-paced, high-volume environment.

Key Responsibilities

• Oversee commissary production for multiple restaurant concepts, ensuring quality and consistency.
• Manage inventory, ordering, and cost controls to meet budgeted targets.
• Train, coach, and develop the BOH team, fostering a culture of excellence and accountability.
• Supervise logistics for a fleet of reefer trucks and drivers to ensure seamless distribution.
• Maintain cleanliness, organization, and compliance with DOH standards and internal protocols.
• Ensure kitchen equipment upkeep and coordinate necessary maintenance.

Qualifications

• 3 years of leadership experience in commissary, high-volume production, logistics, and/or purchasing.
• Strong ability to manage large-scale prep, distribution logistics, and cost control.
• Proven track record in leading, mentoring, and developing teams.
