POSITION DESCRIPTION:
The Graveyard Shift Manager is responsible for assisting the Beverage Manager and Outlet Managers with all front-of-the-house food and beverage operations of the casino resort. This position assists with the oversight of the bars, food, and beverage service and is responsible for overseeing the department during the overnight shift. The Graveyard Shift Manager will assist with all aspects of the food and beverage team and oversee beverage supervisors, bartenders, cocktail servers, barbacks, restaurant servers, cashiers, and assisting positions. The Graveyard Shift Manager must be able to work overnight shifts and varied and extended hours to include holidays, weekends, evenings, and special events. They are responsible for assisting in the training of graveyard shift team members. In addition, the Graveyard Shift manager will assist in monitoring bartender, guest, and Casino floor service, alcohol last call, and removal of alcohol from the casino floor. On a nightly basis, this position will work to maintain the highest level of service standards as well as address and resolve guest complaints. The Graveyard Shift Manager ensures daily the highest quality of hospitality to provide an excellent guest experience. ESSENTIAL DUTIES:

Accountable to all standards outlined in the We-Ko-Pa Way Casino Resort service guide.
Assists the Beverage Manager and Outlet managers with the oversight of all food and beverage operations and staffing including service, scheduling, staffing, and execution of our We Ko Pa Way standards.
Maintains beverage inventory during their shift for maximum efficiency.
Monitors drink accuracy and waste to ensure proper beverage controls through the use of jiggers, perfect pour units, and monthly cost analysis. Oversees the removal of alcoholic beverages from the casino floor on a nightly basis.
Assign team member responsibilities daily including side work, deep cleaning, and front-of-house sanitation.
Maintains a clean-as-you-go standard in all outlets.
Oversees guest satisfaction by ensuring the presence of service on the casino floor and in all bars.
Addresses any food or service-related guest issues and utilizes creativity and resources available to maintain optimum satisfaction.
Works on the floor 90% of the time with a “hands-on” mentality for guest service.
Must be knowledgeable and enforce all elements of IHS health department standards.
Must receive and have a current Food Handlers Card at all times.
Must complete the Management Title IV and Title 31 training through Human Resources
Assists in banquet and catering events for the department.
Oversees menus and maintains the accuracy of online resources.
Performs other related duties as required by the department.
Must be able to lift more than 50 pounds and push or pull 100.
Must be able to obtain and maintain State/Tribal License (including extensive background check).
Must pass a pre-employment drug test.

EDUCATION AND/OR EXPERIENCE:
Two years in a bar or restaurant supervisor or manager role or above is required.
Strong leadership and communication skills
Self-motivated with attention to detail
Knowledge of beverage operations is required.
Strong knowledge of cocktail development, wine, and beer.
Strong understanding of beverage procurement, analysis, costing, and rotation
Strong knowledge of Arizona or comparable liquor laws
Must be certified or obtain certification and training in Title IV and Title 31.
4-diamond resort or casino experience preferred.
