JOB SUMMARY:
Responsible for all food and beverage service for the Wilderness Grill. Directly supervises Wilderness Grill front of house staff, which includes bartenders, servers, hosts, and beverage cart staff. The Dining Room Manager works in conjunction with the Chef to establish revenue goals for the Wilderness Grill through efficient inventory practices, unequaled guest service standards and strict monitoring of both budgeted accounts and financial trends. The Dining Room Manager meets goals, objectives and assignments through effective communication, delegation and follow-up to subordinate staff and personal attention to detail. The Dining Room Manager continually provides staff development, training and motivation to assure the highest degree of professionalism, integrity and service standards.
DUTIES AND RESPONSIBILITIES:
The Dining Room Manager will work under the supervision of the Wilderness Manager with the following duties and responsibilities:
Guest Service:
- Ensure guest expectations are not only met but exceeded.
- Address guest complaints to the satisfaction of the guest, follow through to ensure the situation is corrected
- Assist guests with reservations, special requests, or concerns
- Assist Dining Room staff in the performance of their duties where necessary to ensure guest service goals are met; to include the seating of guests, processing payment transactions, serving and bussing tables as needed.
- Ensure a safe, clean, and sanitary work environment according to industry standards; periodically inspecting Dining Room for neatness, cleanliness and sanitation
Supervision and Management:
- Supervision, training, and evaluation of Host/Hostesses, Servers and Bartenders.
- Supervise and coordinate employees engaged in providing meal service, bussing tables, greeting guests and financial transactions.
- Train new employees in job duties and department expectations; ensure new employees understand Company policies and department policies and procedures
- Develop work schedules in a timely manner to ensure staffing levels are adequate; call in/send home employees as business levels deem necessary
- Interview and select front of the house employees as needed
- Facilitate work orders for maintenance and repairs to maintain the levels of safety and efficiency.
- Supervise employees engaged in storage, inventory, and distribution of food and supplies; recommends purchase of equipment and supplies as needed; Order product as needed
- Manage employee performance utilizing annual performance evaluations, coaching, mentoring, leadership and other performance management tools; providing honest feedback to staff whether it is praise and recognition; or coaching and counseling in a timely fashion; ensure proper documentation of policy violations and disciplinary actions according to company policy; defer to Wilderness Manager on recommendations for termination; addresses staff complaints and resolve problems
- Conduct regular department meetings to update staff on information regarding events, promotions, or changes within the organization
- Complete and submit accurate paperwork immediately following a workplace injury of a Food and Beverage Department employee to the Wilderness Manager.
- Maintain communication with department employees; ensure confidentiality of employee and guest privileged information; communicate with staff on all updated policies and procedures; provide information to staff concerning changes pertinent to department operations; inform staff of in-house promotion details and their involvement
- Monitor daily operations to ensure food safety, sanitation and cleanliness standards are not compromised
- Notify the Wilderness Manager of problems and/or situations incurred within the department.
- Perform other duties as appropriate.
QUALIFICATIONS:
The Dining Room Manager must have a minimum of two years supervisory experience in a restaurant or food service environment. The incumbent must be familiar with all aspects of restaurant operations and equipment with an emphasis on safety and sanitation. In addition, the Dining Room Manager must possess the following skills, attributes, and qualities:
- Leadership skills with an ability to motivate through inspiration and foster an environment with a strong emphasis on teamwork
- Management skills to plan, direct, and coordinate activities of subordinate personnel
- Excellent communication skills with an ability to listen, follow directions, and convey information
- Strong interpersonal skills with an ability to resolve conflicts
- Must be analytical, well organized, and detail oriented with a focus on quality assurance
- Exercise independent judgement and decision making/problem solving skills
- Must be responsible for outcomes
- Safety conscious
- ServSafe certified or valid equivalent food safety certification
- TiPS Certified or valid equivalent alcohol safety awareness certification
PHYSICAL REQUIREMENTS AND WORKING CONDITIONS:
The Dining Room Manager shall have overall good physical and mental health to work in a fast paced work environment. The position will require sitting and standing for extended periods of time, walking and bending and an ability to lift a minimum of fifty (50) pounds. The incumbent will be exposed to heat from kitchen operations as well as exposure to second-hand cigarette smoke, in smoking areas.

This includes, but is not limited to, confidential personnel and guest information, company or department operations and plans, financial data, procedures and processes, or other information without regard to the matters being deemed confidential, material or important.
