Job Title: Assistant Pastry Chef
Location: French Broad Pantry, Asheville
Job Type: Full-Time / Part-Time
Reports To: Bakery Manager
Job Summary:
We are looking for a skilled and detail-oriented Assistant Pastry Chef to join our bakery team. This role requires knowledge of traditional viennoiserie techniques, attention to detail, and the ability to produce and bake high-quality pastries.
Croissant Shaping & Finishing:
- Cut, roll, and shape croissants with precision to ensure uniform size and structure.
- Properly proof croissants to achieve the right volume and texture before baking.
- Apply egg wash and other finishes to ensure golden, glossy pastries.
- Handle filled croissants (e.g., almond, raspberry, and seasonal flavors) with care to maintain consistency.
- Assist in making other pastries such as danishes, kouign-amann, and puff pastry-based desserts.
General Pastry Production:
- Assist in making other pastries such as scones, financiers, crumbles, tarts, etc., as well as prepping savory ingredients for quiches and savory items.
- Follow recipes and procedures to maintain high standards in taste, texture, and presentation.
- Monitor baking times and temperatures to ensure even baking and a consistent product.
Organization & Sanitation:
- Keep the workstation clean and organized, following food safety regulations.
- Assist with inventory tracking and restocking of ingredients.
- Ensure all pastries meet bakery quality standards before being displayed or packed for sale.
Qualifications & Skills:
- Croissant shaping skills, ensuring uniformity and proper structure.
- Familiarity with baking equipment, including ovens, mixers, and proofing cabinets.
- Ability to work efficiently in a fast-paced environment while maintaining attention to detail.
- Strong time management and organizational skills.
- Ability to lift heavy bags of flour, butter blocks, and large trays.
- Culinary or pastry school certification is a plus but not required.
Work Environment & Schedule:
- Early morning shifts may be required to prepare fresh pastries daily.
- Standing for extended periods and working in a warm kitchen environment.
- Full-time or part-time availability based on business needs.
