What are the responsibilities and job description for the Dietitian position at Gales Creek Camp Foundation?
We are looking for a dietitian to help us complete a one-time project to reevaluate our summer camp menu, specifically tailored to the needs of children growing up with type 1 diabetes.
This is a temporary position and the ideal candidate would work as an independent contractor. Hours are flexible and based on deliverables. Candidate will collaborate with our team via Zoom, phone and email to accomplish the goals described below.
Summary:
A key strategy behind Gales Creek Camp’s mission is to model a healthy lifestyle that leads to positive health outcomes for campers. The food we serve is central to this mission, as we strive to provide campers real-world options that are fun, balanced and nutritious. Given that it has been several years since we have taken a holistic look at our menus, some of which have been passed down through decades, we would like to contract, hire, or partner with a Registered Dietitian (RD) who will collaborate with our team to refresh our menus.
Current Situation:
Over 72 summers, Gales Creek Camp (GCC) has accumulated a library of menus. With a new Head Cook every few years and a new kitchen team every summer, each crew has left their mark on camp. At the same time, each year the Camp Dietitian dutifully verifies and re-calculates the carb content of menu choices. However, the Camp Dietitian rarely has time to step back and fully evaluate every meal and snack, of every day, of every week to determine if the menus are truly cohesive and meet GCC’s requirement for nutritious meals, balanced with the desire to provide fun “camp foods” that campers really want to eat.
Proposal:
GCC would like to hire a qualified Registered Dietitian (RD) several months before the summer camp season to collaborate with our Medical Services Director, Camp Manager, and Food Service Director (Head Cook) to review our current menus. The RD must become familiar with Sysco products, our primary food supplier, to support recommendations for change; which may include deleting specific meals, snacks or food items from the menu. Based on their assessment, the RD will compile full-week long menus intended for specific age-groups. Afterall, the taste preferences of grade school campers are very different from those of high school campers. Additionally, all meal and snack menus will provide clear serving size and carbohydrate per serving calculations.
The RD will also develop alternative menu offerings for campers with special dietary needs, including gluten-free, dairy-free, and vegetarian diets, as well as alternatives for the inevitable picky eater.
Outcomes:
With refreshed and verified menus, GCC will properly model healthy food choices for youth living with type 1 diabetes. Providing parents and caregivers with menus ahead of time will give them an opportunity to evaluate and discuss options with their camper, thereby eliminating surprises during camp mealtimes.
Finally, GCC continually strives to assure parents and caregivers of our commitment to provide great care to their children and this is an opportunity to be transparent and share our overall approach to nutrition with our camp community.
Estimated Costs:
We estimate this process to take between 50 and 100 hours for a qualified Registered Dietitian.
