Prep Cook Job Summary
We are looking for an experienced and hardworking Prep Cook to help prepare delicious entrees for our guests. You will help check kitchen stock for fresh ingredients and supplies, prepare components before each meal service, and ensure the work area is clean and ready. During service, you will plate and garnish dishes that are ready to be served to our patrons. We rotate menu items based on seasonal ingredients, which will allow you to cook a variety of exciting meals throughout the year.
Line Cook Duties and Responsibilities
- Check inventory for ingredients and supplies, noting when more need to be ordered.
- Prepping ingredients before each meal service.
- Preparing dishes following exact recipe instructions.
- Plating and garnishing dishes before they are served.
- Cleaning work areas once meal service is completed.
- Responsible for multiple culinary work stations, ensuring the efficiency of the line and kitchen operation on a scheduled shift in accordance with specifications and standards
- Prepares, seasons, finishes, and garnishes all food in kitchen preparation in accordance with established recipes.
- Maintains all refrigeration and dry storage areas to ensure proper handling and rotation of products.
- Ensures that stations are clean and that all food items are properly covered and stored at the end of shift.
- Follows all recipes, specs, and control procedures.
- Maintains a clean and sanitary area at all times in full accordance with health regulations.
- Assists with guest requests.
- Manage a station or multiple stations.

Prep Cook Requirements and Qualifications
- 1 years cooking in a professional kitchen preferred.
- Excelling in a variety of cooking styles and techniques preferred.
- Knowledge of food safety rules and regulations.
- Flexible schedule.
- Strong organizational skills required. ServSafe® certification or ability to become certified required.
- Ability to read and comprehend simple instructions, short correspondence, and memos.
- Ability to perform basic math skills: addition, subtraction, division and multiplication.
- Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions.
- The employee is occasionally required to reach with hands and arms, and to sit, climb or balance, stoop, kneel, crouch or bend. Employee is frequently required to lift up to 25 lb. and occasionally required to lift up to 50 lb. The employee regularly works around mechanical moving parts. The employee's work environment may, at times, be very warm or very cold. The work environment includes moderate exposure to slippery work surfaces and greasy areas.
The Sima Family has owned the 3.5-acre site where Ghost Isle Brewery Bar & Restaurant now sits since the 1950’s when Jim’s grandfather purchased hundreds of acres in New Buffalo, MI. The Brewery overlooks 156 acres of wetlands that was donated by the Sima Family to Chikaming Open Lands, a non-profit organization that now maintains this Michigan state-designated “critical wetlands.”
The beautiful, sweeping wetlands view to be enjoyed by patrons of Ghost Isle carries the name “Louis J Sima Great Lakes Marsh,” after Jim’s beloved Grandfather Louis J Sima. “Ghost Island” itself sits to the left and west of the brewery, and takes its name from generations of residents who played there as children and teens, and who claim there is supernatural activity on the island.
