Important Details & Benefits:

  • Starting Pay – $22/hr dependent on experience, leadership capability/commitment. This is inclusive of tips which average $7 - $10/hr

What to Expect:

The Production Baker is responsible for executing the doughs and fillings from start to finish, ensuring they meet the high standards set by the Executive Pastry Chef (EPC) and GINGER FOX. This role demands exceptional attention to detail in laminating, mixing, troubleshooting, and shaping baked goods. Ideal candidate - Baker - Bakery Production - Bakery Kitchen

  • High-Quality Production - Scale, mix, laminate, and finish all products to the highest standards, following recipes and techniques set by the EPC. Maintain quality control throughout the production process.
  • Product Presentation - Troubleshoot as necessary to ensure products meet quality standards, consistently measuring, cutting, and shaping doughs. Communicate potential changes or concepts to the EPC to improve product quality and presentation.
  • Time Management - Prioritize and manage time effectively to ensure all items meet par levels throughout the week. Oversee ongoing production and communicate any concerns about daily production or production lists to the Head Baker (HB) and EPC.
  • Product Consistency - Maintain consistency in product quality and appearance to align with GINGER FOX’s standards for all baked goods.
  • Cleanliness & Organization - Maintain a clean, organized workspace and equipment. Complete all assigned cleaning tasks on a daily, weekly, and monthly basis, ensuring compliance with health and safety standards.
  • Team Collaboration - Collaborate with team members to ensure smooth operations and timely product turnover. Assist with dual training in all stations, and support colleagues with their tasks. Provide assistance to the Front of House (FOH) during peak hours as needed.
  • Communication - Effectively communicate any production challenges, needs, or adjustments to the EPC to ensure ongoing improvements and smooth operations.

What You’ll Do:

  • Product Quality - Check products for quality and identify damaged or expired goods.
  • Oven Management - Set oven temperatures and place items into hot ovens for baking. Adjust oven temperatures, humidity, or conveyor speeds based on the product's color and consistency.
  • Ingredient Preparation - Combine measured ingredients in mixing, blending, or cooking machinery to prepare batters, doughs, fillings, or icings.
  • Baking & Grilling -Place dough in pans, molds, or on sheets, and bake in production ovens or on grills.
  • Machine Operation - Set time and speed controls for mixing machines, blending machines, or steam kettles to ensure ingredients are mixed or cooked according to instructions.
  • Ingredient Measurement -Measure or weigh ingredients, such as flour, using scales or graduated containers to prepare necessary batters, doughs, fillings, or icings.
  • Raw Materials Check - Inspect raw materials to ensure they meet quality standards and specifications.
  • Equipment Maintenance - Check equipment for health and safety compliance, maintain cleanliness after each use and communicate any issues to management.
  • Ingredient Adjustments - Adapt the quantity of ingredients to match the number of items to be baked.
  • Decorating & Finishing - Apply glazes, icings, or other toppings to baked goods using spatulas or brushes, and decorate cakes or pastries as required.
