Summary:
Responsible for establishing pars, ordering product, ensuring that the presentation of the pastry case adheres to company guidelines, preparation of catering orders, cleanliness of bakery area and supervising all other team members who may assist in bakery
Essential Duties and Responsibilities:
• Knows the GAB mission statement and can execute
• Welcomes guests using the 10–4 rule
• Make sure bakery standards are being upheld at all times
• Communicates new bakery items, discontinued items, issues and changes
• Using all the tools to maintain an organized work area: binder with order history, pmix reports, ingredients, waste
log
• Place bakery orders with vendors using established guidelines
• Makes sure bakery product is being stored and cared for correctly
• Ensure all bakery items have a display tag/sign that are clean and attractive
• Use product mix reports (pmix) to maintain properly stocked bakery
• Make sure shelves and cabinets are kept clean and organized at all times; items are consolidated (plates,
silverware, tongs, trays, silicone mat, bakery sign, stickers, cello tags)
• Make sure bakery props (jars of sprinkles, etc) are clean
• Ensure compliance for all maintenance guidelines of oven, coolers, smallware items, etc.
• Performs regular maintenance of the display cases throughout the day to ensure a full and attractive appearance
• Responsible for checking the catering boards at the beginning and end of each shift
• Executing all catering orders according to company standards
• Communicating what items must be discarded as wasted at the end of each day
• Delegating to PM shift as to what they need to prepare for morning catering orders
• Keep bakery signs holders clean and pristine
• Adjusts bakery pars in response to waste
• Defrost freezers on weekly basis by delegating or doing it themselves (Wabash)
• Cleans bakery fridge on weekly basis by delegating or doing themselves. Weekly clean log is kept
• Communicates daily with GM about issues in the bakery
• Communicates with GM if there is damage or missing product so they can seek credits for vendors
• Make sure bakery is clean at all times, floor and equipment are clean in all nooks and crannies, sink is scrubbed
daily, hand soap dispensers are full, paper towels loaded
• Bakery oven is deep cleaned inside and out weekly. Including moving it to clean under and behind. Clean the tile
behind the oven so it is free of heating damage/exhaust grease. Clean toaster and crumb tray to prevent
smoking/burning
• Communicate with GM any damages to smallware items such as cake stands, utensils, etc. and request
replacements
• Make sure bakery cheat sheet is posted and visible at all times
• Hold other team members accountable for upholding company standards when working in the bakery
• Other duties may be assigned to meet business needs
