Summary: Under general supervision of the Golden Age Manor Administrator, the Director of Food and Nutrition Services is responsible for the daily operation of the dietary department, according to facility policy and procedure and federal/state regulations. Provide leadership and guidance to dietary employees to ensure that food quality, safety standards, and resident expectations are satisfactorily met.

Golden Age Manor nursing home is owned and operated by Polk County, WI.

Essential Duties: These duties represent the typical duties and responsibilities assigned to this position but may not be inclusive of all tasks performed.

  • Recruit, interview, hire, train, coach, evaluate and discipline dietary staff as necessary.
  • Develop work schedules to ensure adequate staff to cover each shift.
  • Participate in menu planning, including responding to resident preferences, substitution lists, therapeutic diets and industry trends.
  • Inspect/taste meals periodically to assure that standards for appearance, palatability, temperature and serving times are met.
  • Assure that foods are prepared according to schedules, menus and standardized recipes.
  • Assure safe receiving, storage, preparation, and service of food.
  • Prepares cleaning schedules and maintains equipment to ensure food safety.
  • Ensure proper sanitization, preparation, holding, service, cooking and transporation of food by employees.
  • Process new diet order and diet changes making sure diet cards are updated on web based system.
  • Complete and implement required documentation (i.e. Minimum Data Set, care plan, resident assessments, etc.) in compliance of the state and federal codes as well as departmental assignments.
  • Develop and write policy and procedures for department and update as needed.
  • Determine resident needs and develop appropriate dietary plans in copperation with the consultant RD and in compliance with the Physician orders.
  • Review plan of care related to nutritional status; document concerns that can be resolved, improved, or addressed to improve residents nutritional status and eating.
  • Support the consultant RD (Registered Dietician) as needed.
  • Attends interdisciplinary team and care plan meetings.
  • Attends professional in-services/confernces for continuing education to ensure current knowledge of industry and personal growth.
  • Interacts positively with community providers and the general public; performs duties with consideration for residents, peers, other employees and visitors.
  • Purchases needed supplies, equipment, food and supplements for the dietary department. Controls the budget of the dietary department, including provision of capital requests to the administrator. Monitors the departmental budget monthly through reports generated by the business office manager.
  • Participates in QAPI (Quality Assurance & Performance Improvement) for facility and department.
  • Facilitate monthly or quarterly (schedule to be determined based on need) food committee meetings with resident group.
  • Maintains current knowledge of state and federal requirements.
  • Continually evaluates effectiveness of dietary department.

Supervisory Responsibilities: Supervises dietary staff.

Education/Experience/Certification:

Required (Per F801 State Operations Manual):

The Director of Food and Nutrition Services must-

o Be a certified dietary manager; or

o A certified food service manager; or

o have similar national certification for food service management and safety from a national certifying body; or

o have an associate’s or higher degree in food service management or in hospitality, if the course study includes food service or restaurant management, from an accredited institution of higher learning; or

o has 2 or more years of experience in the position of director of food and nutrition services in a nursing facility setting and has completed a course of study in food safety and management, by no later than 10/1/2023, that includes topics integral to managing dietary options including, but not limited to, foodborne illness, sanitiation procefures, and food purchasing/receiving; and

o Receives frequently scheduled consultations from a qualified dietitian or other clinically qualified nutrition professional.

Job Type: Full-time

Pay: $25.00 - $26.00 per hour

Expected hours: 37.5 per week
