Dry Curing / Deboning / Shipping

Essential Functions - Dry Curing (Boone and/or Wilkesboro Locations)
- Cures whole hams: Carries sacks of such materials as sugar, sodium nitrate, and salt to curing room, (after training) uses pallet jacks and other tools to assist with heavy loads.
- Weighs out specified amounts of materials and mixes them by hand (after training) in mixing machine.
- Use both hands to apply cure mixture to whole hams, manipulate hams into nets, and hangs hams on curing racks.
- Uses various curing machinery and keeps curing space clean.
Essential Functions - Deboning
- Responsible for learning and using Goodnight Brothers technique for de-boning and skinning cured, whole hams prior to future processing.
- Must be able to use both hands to manipulate hams out of nets and use knives to remove bones and skin/trim fat.
- Must be able to understand and use Goodnight Brothers De-Boning technique.
- Ability to use various machinery while complying with safety protocol post training.
- Ability to stand for the duration of the shift with current schedule of breaks.
- Ability to maintain consistent technique and pace for the duration of the shift.
- Ability to recognize and report material or machinery issues to supervisor.
Essential Functions - Shipping
- Picking, packing, and shipping merchandise for multiple companies.
- Operate pallet jacks to transfer supplies.
- Keep accurate count of product completed each day.
- Ensure accurate label usage and proper equipment function.
- Ability to attend all scheduled shifts for the duration of the shift.
- Ability to recognize and report mechanical or material issue to Supervisors.

Work Environment
While performing the duties of each department's job, an employee is frequently exposed to salt cure, varying temperatures, various blades, and machinery noise.
Physical Demands - The physical demands here are representative of those that must be met by an employee to successfully perform the essential functions of this job.
While performing the duties of this job, the employee is regularly required to talk and/or hear. The employee is required to stand, walk, use both hands to finger, handle, or feel, and reach with hands and arms for the duration of the shift. These positions involve frequently walking and lifting (up to 30-65 lbs), pushing/pulling curing racks 1200-2000lbs. Deboning positions additionally require repetitive, pressured, and intricate handling of knives to cut through materials to remove bones from whole hams.
Position Type/Expected Hours of Work
These are full time positions. Hours and days or work are Monday - Friday, 7:00am - 3:30pm, with occasional Saturday work.
