Job Title: Quality Control Manager

Job Overview
Gourmet House Caviar is seeking an experienced and detail-oriented Quality Control Manager to oversee and ensure the highest standards of quality and compliance in our caviar repackaging facility. The Quality Control Manager will be responsible for establishing, implementing, and monitoring quality control processes, ensuring compliance with FDA, USDA, and HACCP (Hazard Analysis and Critical Control Points) requirements, and maintaining product integrity from receiving to shipment. This role will play a key part in maintaining Gourmet House’s reputation for premium quality and excellence in the luxury food market.
Key Responsibilities
Quality Assurance & Control
- Develop, implement, and oversee comprehensive quality control processes for caviar handling, repackaging, storage, and distribution.
- Establish and enforce standard operating procedures (SOPs) to ensure consistency and quality across all production lines.
- Conduct regular inspections of raw materials, production processes, packaging, and finished products to ensure compliance with internal and regulatory standards.
- Monitor caviar storage conditions, including temperature and humidity, to maintain product integrity.
- Establish and maintain a traceability system to track product batches from receiving to distribution.
- Implement and oversee a system for handling product defects, customer complaints, and non-conformance issues.
- Ensure that all labeling complies with FDA and USDA regulations, including proper ingredient declarations, expiration dates, and nutritional information.
Compliance & Regulatory
- Ensure compliance with all relevant food safety regulations, including:
- FDA – Food Facility Registration, Seafood HACCP, and Food Safety Modernization Act (FSMA) requirements.
- USDA – Product labeling and handling requirements.
- HACCP – Maintain a certified HACCP plan and conduct regular audits and updates.
- ISO 22000 – (if applicable) Maintain food safety management system compliance.
- Prepare and oversee audits and inspections by regulatory agencies and third-party certifiers.
- Conduct internal audits to assess compliance and identify areas for improvement.
- Stay updated on changes to food safety and industry regulations and implement necessary adjustments.
Training & Leadership
- Develop and deliver training programs to production staff on quality control processes, food safety protocols, and proper handling procedures.
- Establish a quality-focused culture within the production team through regular training and performance evaluations.
- Lead and mentor the quality control team, providing guidance and fostering a collaborative work environment.
- Handle investigations and corrective actions related to quality incidents and customer complaints.
Documentation & Reporting
- Maintain accurate records of quality control inspections, test results, corrective actions, and customer complaints.
- Prepare and present detailed quality reports to senior management, highlighting trends and potential issues.
- Maintain and update the quality management system (QMS) to ensure continuous improvement.
Qualifications & RequirementsEducation and Certifications:
- Bachelor’s degree in Food Science, Microbiology, Quality Management, or a related field.
- HACCP Certification – Must be certified in Hazard Analysis and Critical Control Points.
- PCQI Certification – Preventive Controls Qualified Individual certification (required under FSMA).
- FDA Seafood HACCP Certification – Must have completed an FDA-approved Seafood HACCP training.
- ISO 22000 Certification (preferred) – Food Safety Management System certification.
Experience:
- Minimum of 3 years of experience in food production, quality assurance, or quality control, preferably in the seafood or luxury food industry.
- Strong experience in working with FDA and USDA regulations.
- Experience in conducting internal and external audits.
- Proven track record of implementing and managing quality control systems in a food production environment.

- This role requires working in a refrigerated environment.
- Must be able to lift up to 50 lbs when handling product shipments
