Job Summary
The primary purpose of this position is to assist the Dietician in planning, organizing, developing, and directing the overall operation of the Dietary Department in compliance with federal, state, and local standards, guidelines, and regulations governing our facility. This is to ensure quality nutritional services are provided daily and that the department is maintained in a clean, safe, and sanitary manner.

As the Dietary Manager, you are delegated administrative authority, responsibility, and accountability for carrying out your assigned duties.
Job Functions

Administrative Functions
- Assist in planning, organizing, and directing the Dietary Department's programs and activities
- Coordinate dietary services and activities with other departments, such as Nursing, Housekeeping, and Social Services.
- Develop and maintain dietary policies, procedures, job descriptions, and performance evaluations.
- Interpret and communicate department policies and procedures to employees, residents, and visitors.
- Perform administrative duties, including completing necessary forms and reports.
- Maintain a file of tested standard recipes.
- Recommend adjustments to dietary services based on economic conditions.
- Inspect food storage rooms and other areas for maintenance and supply control.
- Process diet changes and new diets promptly as they are received from nursing services.
- Develop, implement, and maintain a quality assurance program for the Dietary Department.
- Participate in surveys and inspections conducted by authorized agencies.
Committee Functions
- Provide written or oral reports on dietary services to various committees as required.
- Participate in reviews of discharge plans and make revisions as necessary.
- Evaluate and implement committee recommendations related to dietary services.
Personnel Functions
- Assist in recruiting, interviewing, and selecting dietary personnel.
- Schedule department work hours, personnel assignments, and work shifts.
- Train and supervise dietary staff, including providing leadership and ongoing feedback.
- Monitor staff performance and take corrective action as needed.
- Maintain a productive working relationship with other departments.
Staff Development
- Plan and conduct in-service training for dietary personnel.
- Develop and implement an effective orientation program for new employees.
- Encourage staff participation in training programs to improve their skills and knowledge.
Safety and Sanitation
- Monitor staff to ensure compliance with safety regulations in the use of equipment and supplies.
- Ensure all food preparation and storage areas are maintained in a clean and sanitary condition.
- Develop and implement procedures for reporting hazardous conditions or equipment.
Equipment and Supply Functions
- Recommend equipment and supply needs for the department.
- Ensure necessary equipment is available and functioning properly.
- Monitor inventory levels to ensure adequate supplies are maintained.
Care Plan and Assessment Functions
- Assist in developing dietary care plans that identify residents' dietary needs and goals.
- Participate in care plan meetings and provide updates as necessary.
- Monitor residents' weight and dietary intake, and address issues promptly.
Budget and Planning Functions
- Assist in preparing the Dietary Department's budget for food, equipment, supplies, and labor.
- Maintain written records of department expenditures and adjust as necessary to conform to budgetary guidelines.
Resident Rights
- Maintain confidentiality of all resident information.
- Monitor dietary services to ensure residents' needs are being met.
- Address and resolve resident complaints or grievances promptly.
Miscellaneous
- Conduct weekly inspections of dietary functions to ensure quality control.
- Handle emergencies, such as rescheduling staff or work assignments.
- Ensure protective clothing and equipment are available for handling infectious waste.
Working Conditions
- Work in office areas and throughout the facility's dietary service areas.
- Sit, stand, bend, lift, and move intermittently during working hours.

Education
- High School Diploma required.
- Certification in Food Service Sanitation by the Illinois Department of Public Health.
- Certified Dietary Manager designation or enrollment in a state-approved 90-hour Food Service Supervisor course.
Experience
- At least two years of experience in a supervisory capacity.
