POSITION TITLE: Sous Chef
DEPARTMENT: Care Center Nutritional Services
BASIC FUNCTION: The Sous Chef collaborates with the Café Manager in the daily operations of the Nutritional Services Department at our beautiful Long Term Care Center. You will manage inventory, oversee purchasing of supplies, orchestrating cost control and menu development. Your strong leadership skills will motivate and guide your team to operate seamlessly, even in the heat of service! The ideal candidate will respond well with feedback from our residents to create culinary masterpieces.
RESPONSIBILITIES:
- Work involves cooking within recipe and menu requirements and under the supervision of the Café Manager.
- Responsible for planning, preparing, cooking, and executing the resident's selective menu systems.
- Coordinates at times with a Registered Dietitian to manage resident's dietary requirements.
- Ensures meals are completed on time and that the quality and appearance of completed dishes are of the highest possible standard before serving.
- Responsible for regulation of cooking temperatures, setting time cycles for products, maintaining a clean and sanitary work station and keeping the kitchen organized.
- Recording of food temperatures occurs prior to food leaving the main kitchen for onward transmission to neighborhoods.
- Managerial responsibilities may include participating in hiring activities, train and mentor other staff members and trainees.
- Conducts activities and carries out responsibilities with consideration of inventory management, budget and costs.
- Coordinates with other Nutritional Services staff members to pair complementary flavors and dishes.
- Oversees the activities of the kitchen staff and monitors food production and presentation in the absence of the Café Manager.
- Duties include meal preparation for special functions and events as required.
QUALIFICATIONS:
- Must obtain Food Handler Certification from an ANSI accredited program within one month of hire and maintain current status throughout GRHD employment.
- A minimum of 4 years restaurant experience preferred.
- Healthcare experience in a similar role preferred.
SALARY INFORMATION:
$22.00-$26.21 Dependent on Experience
