What are the responsibilities and job description for the Sous Chef position at Grand River Health?
BASIC FUNCTION: Assists the Executive Chef in the daily operations of the Nutritional Services Department, including menu development, inventory, purchasing of supplies, cost control, and maintaining high standards of cleanliness and food safety throughout the kitchen. They will oversee kitchen operations, including supervising staff, managing food preparation, and ensuring dishes are prepared to standard in the absence of the Executive Chef.
KEY RESPONSIBILITIES:
- Planning, preparing, cooking, and executing the patient-selective menu systems as well as front of house menus/meals using established recipes and methods.
- Familiarity with best practices in the hospital industry.
- Knowledge of health and safety standards.
- Ability to effectively manage kitchen staff, motivate, and assign duties fairly.
- Ensures food production is completed on time and of appropriate quality.
- Oversees the activities of the kitchen staff and monitors food production and presentation in the absence of the Executive Chef.
- Cooks within recipe and menu requirements and under the supervision of the Executive Chef.
- Coordinates at times with a Registered Dietitian to manage patient dietary requirements.
- Requires testing and tasting of recipes; measuring and mixing ingredients.
- Duties include meal preparation for special functions and events as required.
- Responsible for regulation of cooking temperatures, setting time cycles for products, maintaining a clean and sanitary work station and keeping the kitchen organized.
- Recording of food temperatures occurs prior to food leaving the main kitchen for onward transmission to departments.
- Ensures the quality and appearance of completed dishes are of the highest possible standard before serving.
- May at times be required to train and mentor other staff members and trainees.
- Coordinates and participates in hiring activities as assigned.
- Conducts activities and carries out responsibilities with consideration of inventory management, budget and costs.
- Coordinates with other Nutritional Services staff members to pair complementary flavors and dishes.
- Follows direction from Executive Chef while carrying out responsibilities and duties.
- Works varied shifts; at times unsupervised.
- May be required to operate cash register at times.
- Responsible for the cleanliness and stock levels of the refrigerator and freezer.
- Assists with putting orders away.
- Assists in cleaning and maintaining the kitchen, pantry, storage areas, and equipment.
- Responsible for checking material and supply stock levels and reporting when stock is low.
- Greets and serves customers in the café, including employees, patients, and visitors.
- Customer interactions at times include answering phone calls, receiving meal orders, informing customers about services available, explaining menu items, providing suggestions to customers when asked, etc.
- Duties include cleaning food service area, kitchen and cafeteria as required.
- Dishwashing duties include cleaning cooking areas, utensils, and equipment in the kitchen, washing and sorting flatware, serving dishes, china, and glasses, and operating a dishwashing machine.
- Cross trains with other members of the Nutritional Services Department including Cooks, other Food and Service Prep staff, Banquet staff, etc.
- May assist with conference room accommodation and Meals on Wheels preparation at times.
- Visibility requires maintaining a professional appearance and providing a positive company image to the public.
- Relies on instructions and pre-established guidelines to perform the functions of the job.
- Performs a variety of tasks and other duties as assigned.
QUALIFICATIONS:
- A minimum of 4 years food service experience preferred.
- 1-2 years supervising personnel in a professional setting preferred.
- Healthcare experience in a similar role preferred.
- Must obtain Food Handler Certification from an ANSI accredited program within one month of hire and maintain current status throughout GRHD employment.
SALARY INFORMATION:
- $24.96-$29.50 Dependent on experience may vary outside this range
- Additional $2.00 - $4.00 an hour for additional weekend and night shifts
- Compensation may vary outside this range depending on a number of factors, including a candidate’s qualifications, skills, competencies and experience
