Job Summary:
The chef de cuisine is responsible for all culinary operations, including menu creation, kitchen staff management, food quality, and cost control. The ideal candidate will have a deep understanding of seasonal cooking, a passion for hospitality, and strong leadership skills to oversee a high-energy kitchen.
Key Responsibilities:Menu Development & Execution:
- Design and implement innovative, seasonally inspired menus that align with the restaurant’s concept.
- Ensure food quality, consistency, and presentation meet high standards.
- Incorporate locally sourced ingredients and create dishes that highlight regional flavors.
Kitchen Management:
- Oversee all kitchen operations, ensuring smooth and efficient service.
- Hire, train, and manage kitchen staff, fostering a positive and productive work environment.
- Maintain high standards for food safety, sanitation, and cleanliness.
- Develop and enforce kitchen policies, procedures, and best practices.
Financial & Cost Control:
- Manage food and labor costs, ensuring profitability without compromising quality.
- Monitor inventory levels, place orders, and minimize waste.
- Work closely with ownership and management to meet financial targets and optimize food costs.
Collaboration & Leadership:
- Work closely with the front-of-house team to create a seamless dining experience.
- Lead by example, maintaining a hands-on approach during service.
- Foster a team-oriented culture with open communication and continuous improvement.
Qualifications & Requirements:
- Minimum 2 years of experience as a sous chef or chef de cuisine in a high-volume restaurant.
- Strong knowledge of seasonal and locally sourced ingredients.
- Experience in menu costing, inventory management, and kitchen budgeting.
- Proven leadership and team-building skills.
- Passion for hospitality and commitment to exceptional guest experiences.
- Ability to thrive in a fast-paced environment and adapt to seasonal demand fluctuations.
- Culinary degree or equivalent experience preferred.
- ServSafe Certification (or ability to obtain).
