Job Summary:
Gurney’s Montauk Resort & Seawater Spa is seeking an experienced and creative Pastry Chef to oversee all pastry operations. This role is responsible for the preparation and execution of high-quality pastries, breads, and desserts for GiGi, Dune Café, In-Room Dining (IRD), banquets, guest amenities, and special requests. The Pastry Chef will also manage inventory, ordering, and production schedules to ensure consistency, efficiency, and excellence. This position reports directly to the Executive Chef.
Key Responsibilities:
- Plan, prepare, and execute all pastry and dessert items for GiGi, Dune Café, IRD, banquets, amenities, and special requests in alignment with Gurney’s high standards.
- Develop and refine dessert menus, ensuring creativity and alignment with seasonal ingredients and guest preferences.
- Maintain consistency and quality by following standardized recipes and plating guidelines.
- Oversee ordering and inventory for all pastry-related ingredients and supplies, ensuring proper stock levels and minimizing waste.
- Ensure compliance with food safety and sanitation regulations, including proper storage, labeling, and cleanliness.
- Train and mentor pastry team members, fostering a positive and efficient working environment.
- Collaborate with the Executive Chef and culinary team on menu development and special event planning.
- Monitor and manage costs related to pastry production, including labor and ingredient expenses.
- Work closely with banquet and events teams to fulfill special pastry requests and custom dessert orders.
- Ensure the pastry kitchen is maintained in a clean, organized, and professional manner.
Qualifications:
- Minimum of 3-5 years of experience as a Pastry Chef in a high-volume, upscale dining or luxury hotel setting.
- Degree or certification in Culinary Arts or Pastry & Baking from a recognized institution is preferred.
- Strong knowledge of classic and modern pastry techniques, as well as bread baking and plated desserts.
- Experience managing inventory, ordering, and production schedules.
- Ability to multitask and work efficiently in a fast-paced environment.
- Strong leadership and team management skills.
- Excellent attention to detail and creativity.
- Knowledge of food safety and sanitation regulations.
Physical Requirements:
- Must be able to stand and walk for extended periods (8 hours per shift).
- Ability to lift, carry, and move objects up to 50 lbs.
- Comfortable working in a hot, humid, and fast-paced kitchen environment.
- Must be able to bend, reach, and perform repetitive motions.
- Ability to work flexible hours, including early mornings, nights, weekends, and holidays as needed.

Salary : $115,000 - $124,000
