Job Description
We are seeking to hire an experienced Chef de Cuisineto lead our Culinary Team at Patterson Kitchen & Bar!

Essential Functions
Independently manages kitchen personnel, specifically line cooks and dishwashers, to include but not limited to the responsibility of hiring, training, administering performance reviews, determining wages, coaching and discipline, termination, and weekly scheduling.
Work closely with the Executive Chef and Executive Sous Chef to ensure that all items needed are in stock for the menu.
Alert, friendly and able to assist guests with courtesy and promptness.
Coordinate with the chef for food preparation, presentation, and proper service procedures.
Inspect equipment before and after use, making sure everything is clean and in proper working order.
Maintain cleanliness of workstation, kitchen area, and walk-in cooler / freezer.
Be conscious of proper storage of all food products, especially hot and cold meats, seafood and other high protein items.
Review prep list, check daily pars and maintain pars as necessary, order stock from specific list, and ensure all food items are dated and up to company standards.
Oversee inventory of stations, control quality of food, avoid waste, and ensure proper rotation and utilization.
Train employees to keep up with company standards and new changes.
Check all food for proper consistency, temperature, and flavor.
Coordinate workflow to ensure a smooth-running operation.
Make sure kitchen is clean and kept neat according to health department standards, also supervise dishwashers and other cooks in their respective duties.
Check food orders going out of the kitchen and food being prepared.
Review all kitchen staff necessary for any special parties or orders and follow up on completed work.
Monitor employees performance and issues, discipline when necessary.
Handle all necessary paperwork related to this position (discipline reports, handing out forms to employees, evaluations, special assignments, and communication in logbook for other shifts).
Communicate with chef on all problems, complaints, and discrepancies.
Assist team members as needed to promote a positive teamwork environment.
Work the hot line 4-5 shifts a week on each station
Create daily and seasonal features
Complete monthly inventory, end of month sheets and submit to Hay Creek Corporate
Keep tabs on daily labor numbers and Cost of goods sheet and adjust purchases/flex scheduling accordingly
Address each and every guest using the S.E.A.C. method, with a smile, eye contact, acknowledge their presence in a timely manner with appropriate greeting, and kindly close.
Attend all scheduled meetings and training sessions.
Understand and practice all HCH safety and security procedures, including Emergency Evacuation Procedures, Accident Reporting, Right to Know Law, Written Information Security Program, Bloodborne Pathogen Procedures, Anti-Harassment Policy, and Violence in the Workplace Policy.
Comply with all Hotel and HCH time and attendance policies.
Comply with all Hotel and HCH uniform, dress code, and appearance standards.

Required Experience
- High School diploma or equivalent.
- 2 years of recent Culinary experience in a high volume, full service restaurant in a LEADERSHIP ROLE.
- Excellent Knife skills.
- Must continuously demonstrate a positive, upbeat and customer-focused attitude.
- Flexibility to work days, nights, weekends, holidays, and other high-volume days and times (i.e. town festivals).
- Ability to remain standing for 8 hours (or 100% of shift)
- Ability to frequently move and lift up to 80 lbs.
- Ability to walk the property and grounds on occasion.
- Ability to move up and down stairs regularly.
