Summary
Under general direction, manages the food service operations of the Hays County Juvenile Center providing detainees with meals and snacks that at least meet the minimum standards of the Texas Juvenile Justice Department (TJJD) and the NSLP / SBP program.

- Cooks the food with the help of staff.
- Cleans and supervises the cleaning of the kitchen in accordance with Health Department standards.
- Assures staff has the necessary items to complete their assignments.
- Develops and implements policies and procedures for the efficient and effective operation of the kitchen.
- Compiles necessary paperwork for the NSLP / SBP program
- Ensures meals meet dietary requirements of USDA school breakfast, lunch, and dinner dietary allowances.
- Place orders for commodities through the Texas Department of Agriculture using the WBSCM system.
- Ensures meals are prepared accurately and on time for the meal schedules.
- Develops weekly menus to provide variety and nutrition for all parties.
- Defers to dietitians for special meals for detainees.
- Meets with food service staff, detention staff, dietitians, etc. to resolve problems.
- Takes weekly inventory and orders food supplies.
- Reviews and approves time sheets of food service staff.
- Schedules, assigns, and evaluates the performance of food service staff and detainees assigned to the food service area.
- Checks equipment to assure cleanliness, proper operability, and whether routine maintenance is being performed.
- Contacts appropriate vendor for maintenance / repair.
- Will serve on call status for emergency situations.
- Will perform other duties may be assigned.

Health certificates from the County Health Department.
