What are the responsibilities and job description for the Corporate Chef position at HCF Management?
Position Summary:
The Corporate Chef plans, organizes, coordinates and delivers training and expertise to Nutrition Services Supervisors, Cooks and Nutrition Services Assistants to provide nutritious and palatable foods to the residents. The corporate chef must strive to meet professional standards of food preparation and safety for all nursing facilities, assisted living, and specialty care units. The standards of practice put into effect will positively impact resident care.
- Provides routine training to Nutrition Services Supervisors, cooks and assistants on food preparation, cooking, presentation and customer service
- Assists Corporate Dietitian and Senior Dietitian in development of biannual cycle menus for both skilled nursing facilities and assisted living/independent living facilities
- Assists Corporate Dietitian with development and revision of primary vendor order guide by reviewing, approving and consulting with food brokers and distributors, to ensure standards for health, quality, taste and value
- Assists in promoting goodwill and communications among all concerned with Nutrition Services
- Translates recipes and the vision behind them to kitchen teams, standardizes production procedures, and ensures proper execution by staff
- Consults with Corporate Dietitian, Senior Dietitian, Regional Directors of Operations, and other corporate personnel on opportunities, situations, and challenges relative to Nutrition Services operations
- Assists Corporate Dietitian in planning and budgeting for Nutrition Services operations
- Consults with food purchasing vendor and other vendors as needed.
- Evaluates food service systems and recommends performance enhancements to provide optimal nutrition care and high quality food service
- Attends meetings at Home Office and other facility locations as needed.
Knowledge, Skills and Abilities: Must have an associate or baccalaureate degree in culinary arts, business management or related field. Experience in long-term health care foodservice operations is preferred. Has the ability to read, analyze, and interpret the most complex documents. Ability to respond effectively to the most sensitive inquiries or complaints. Provides professional consultation to develop problem solving ideas with management and facilities.Has the ability to apply mathematical operations to such tasks as frequency distribution, determination of test reliability and validity, analysis of variance, and factor analysis.
