Job Summary:
We are looking for a skilled Meat Cutter or Butcher to join our manufacturing team to provide high-quality cut meat to our 23 retail stores. The Butcher will perform quality inspections and work with knives, saws, and other tools to cut meat down into smaller portions and prepare the cuts to be packaged. In this role, you break down subprimal beef, pork, and poultry into various cuts. You must follow all refrigeration, food safety, and sanitation guidelines. To succeed as a Meat Cutter, you should be courteous, knowledgeable, and detail-oriented. You should have excellent communication skills and a strong understanding of meat quality, cuts, and preparation.
Responsibilities:
- Breaking down subprimal beef and pork as instructed by a cut sheet or verbal communication
- Maintaining the separation of different species
- Ability to learn the names of cuts of meat and how to cut them to maximize yield
- Ability to learn how to work safely with equipment like meat saws, slicers, grinders, and knives.
- Assisting other employees with moving meat through packaging and labeling
- Keeping detailed records of production and inventory
- Performing quality inspections on meats
- Planning the work flow of the production plan
- Adhere to company Safety Rules, Hazard Analysis & Critical Control Points (HACCP) Standard Operating Procedures (SOP), Good Manufacturing Practices (GMP) and Standard Sanitation Operating Procedures (SSOP).
Qualifications:
- High school diploma or GED certificate preferred
- Prior meat cutting experience or training strongly preferred
- Have good personal hygiene
- Knife skills
- Basic math skills
- Knowledgeable about various cuts of meat and proper cooking techniques
- Ability to lift up to 50 pounds
- Ability to stand for up to 8 hours
