Job Summary
The Baker is responsible for opening the bakery early in the morning, mixing dough, preparing fillings and glazes. Responsibilities include food quality management, training, proficiency in using our baker management tools, safety and sanitation practices, working to ensure best food cost and food waste in the bakery department and execution to offer fresh and delicious goods to our customers on a daily basis.
Responsibilities
- Sets up, stocks and organizes work station at the beginning of the day.
- Uses knives, measuring ladles, scoops, scales, can opener, mixer and other tools or utensils.
- Prepares all bakery donuts, breads, cakes and specialty items using recipes. Uses pan, stock pots, stove, ovens and fryers.
- Prepare, proof and cook dough
- Mix various ingredients to create fillings for cakes and pies (e.g. chocolate ganache, caramel sauce and fruits)
- Decorate donuts with glazes, icings, buttercream and a variety of toppings
- Cleans and sanitizes station and equipment during the day and at the end of the day.
- Maintains proper food storage temperatures and rotation using FIFO Method.
- Handles multiple priorities, and works well under stress
- Correctly set up, operates, breaks down and cleans all station equipment.
- Follows sanitary practices for food handling, general cleanliness, and maintenance of Kitchen are.
- Comprehends all production sheets and tools as they pertain to the prep department and can use them in daily operations as well as training situations.
- Complies with all health and safety regulations.
