Position Description
The Cellar Person at Hi-Wire Brewing is responsible for working within the cellar department to ensure that the highest quality product is released to packaging in a timely fashion. In order to help ensure all aspects of this position are performed as expected, measurable metrics will be provided along with regularly scheduled performance reviews. This is a permanent, full-time position that reports to the Operations Manager.
- Learn, understand and execute cellaring procedures according to Hi-Wire’s SOPs
- Work closely with the Cellar Manager, Operations Manager, and Head Brewer
- Communicate with the packaging crew when beer is ready to be packaged
- Work with the Cellar Team to ensure that all daily tasks are completed in a timely and efficient manner.
- CIP transfer lines and transfer beers as scheduled using a Westfalia centrifuge with inline carbonation.
- Clean all tanks that are empty, dirty, and need to be cleaned
- Complete fermentation checks by measuring and recording gravity, pH, and temperature; including weekend rotations
- Enter all data in relevant softwares
- Complete yeast cell counts and viability checks, calculating the amount of yeast needed to fully ferment the day's brews as assigned
- Harvest yeast as needed with a focus on quality
- Work closely with Cellar Team to complete appropriate planning to ensure that there is a viable yeast source available for weekly brewing including safeguarding yeast source from being dry hopped or sullied with additives (ex. coffee) that may prevent use
- Dispose of excess yeast and chemicals in according to guideline provided by Brewing Coordinator and Compliance officer
- Add ingredients to fermenting or finished beer in a sanitary and efficient manner(ie:dry hopping and Fruit additions)
- Assist in the cleaning of the cellar areas and the washing of equipment, floors and tools to comply with company and government sanitation standards
- Contribute to improvements and processes required to gain efficiency and quality
- Knowledge in the use of equipment such a Gehault, Orbisphere, and Zahm Nagel to measure CO2 and O2 levels
- Participate in safety and maintenance program
- Complete other tasks accurately as assigned by management within specified time frames
Qualifications
To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.
- 2 years experience in a production brewery (Cellaring or Brewing)
- Knowledge of cellar program
- Writing and math skills necessary to accurately complete a dilution calculations, volume, flow, density, weight, length, pressure and other unit conversions, calculate beer volumes/losses, and alcohol content
- Exceptional time management skills
- Exceptional multitasking/prioritizing skills

- Physical Requirements:
- Must be able to continually lift 65 pounds
- Must have the ability to regularly stand, walk, use hands, reach, climb, work from heights, stoop, kneel and crouch
- The ability to work near moving parts and machinery
- The ability to work in loud, wet, cold, hot, indoor and outdoor environments frequently
