Job Summary
The sous chef in a stadium setting will be responsible for assisting the Executive Chef in overseeing all culinary operations within the stadium, including food production, staff management, menu development, quality control, and sanitation, ensuring high-quality food is prepared efficiently during large events(games and concerts, etc) while adhering to strict health and safety standards; essentially acting as the second-in-command in the kitchen, managing daily operations and staff during high-volume periods.
Essential Duties and Responsibilities
· Menu planning and execution: Collaborate with the Executive Chef and management team to develop and maintain menus for various events, including game-day specials, catering options, and concessions, ensuring variety and appeal to diverse crowds
- Staff management: In coordination with the Executive Chef, lead and supervise a team of cooks, which may include line cooks prep cooks, and concession stand cooks, ensuring proper training, task delegation, and performance evaluations, especially during peak event times.
- Food production oversight: Monitor food preparation processes, ensuring consistency in quality and adherence to recipes, while optimizing production flow to meet event demands.
- Inventory control: In coordination with the Executive Chef, manage food inventory levels, minimizing waste and ordering supplies to meet anticipated demand, while staying within budget constraints.
- Food safety and sanitation: Enforce strict food safety protocols, including proper handling, storage, and cleaning procedures, to maintain compliance with health regulations. Ensure all workstations, storerooms and concession/catering areas remain clean, sanitized, safe, and in proper working order at all times
· Food Quality Control: Maintain high standards of food quality and presentation, ensuring all dishes are prepared according to recipes and specifications while adhering to food safety regulations
· Cost control: Analyze food costs and identify areas for optimization, ensuring profitable operations
- Compliance: Ensure adherence to all health and safety regulations, including proper food labeling, and temperature controls
- Equipment maintenance: In conjunction with the Executive Chef, oversee proper care and maintenance of kitchen equipment to ensure efficient operations
- Communication and collaboration: Effectively communicate with the Executive Chef, other kitchen staff, and front-of-house personnel to ensure smooth event execution
- Other duties as assigned

- Minimum three (3) years experience in a high-volume full-service food operation
- Proven culinary skills with experience in high-volume kitchen environments
- Strong leadership and supervisory abilities to manage a large kitchen team
- Understanding of food cost management and inventory control practices
- High Level of Computer Literacy
- Must have knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment
- Ability to obtain and maintain Oregon Food Handlers or Serve Safe Certification
- Excellent communication and problem-solving skills to address challenges during busy events
- Ability to adapt to changing demands and work under pressure during high-volume events
- Must be flexible to work extended hours due to business requirements including nights, weekends, and holidays as dictated by event schedule (six-game homestands, concerts, etc.)
- Ability to read, speak, and write in English
- Must have sufficient mobility to perform assigned tasks including constant reaching, bending, stooping, wiping, pushing,g and pulling for extended periods.
- Must have the ability to lift, push, pull approximately 50lbs
- Must be able to stand or walk for long periods
- Must be available for all stadium events

Vision requires the ability to constantly adjust focus, peripheral vision, and close vision to stock products and operate equipment. The ability to frequently hear the communication of others in a loud environment. Employees will be required to stand or move about the building extensively and continuously on concrete floors.
Work environment: The duties of this position are performed both indoors and outdoors. The noise level in the work environment is usually moderate to loud depending on events in a stadium environment with thousands of guests in attendance.
