Position Purpose:
Responsible for production of food for all Banquet Functions, and the food cost control for the Banquet Kitchen, also, to ensure that the guests and owners expectations are exceeded.
Essential Functions:
- Hire, train and supervise banquet cooks involved in preparing, cooking and presenting of food.
- Monitor staff performance, product quality, production and cost of all food, and staff are maintaining cleanliness, organization, and sanitation of all kitchen prep, storage, coolers and freezers.
- Organize and prepare product requisitions and ordering.
- Plan and create prep/cleaning duties as dictated by daily business.
- Ensure all food is ready on time for all functions, and is properly prepared, seasoned and presented.
- Ensure all food items are returned to the kitchen and properly stored, if the product can be reusable. Identify items that can be sent to the café.
- Audit to make sure that all food is properly stored and rotated for maximum shelf life.
- Ensure proper sanitation and maintenance of area of kitchen to comply with health code standards.
- Ensure quality of café food and products are at the same quality standards as we provide to guests.
Supportive Functions:
In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the hotel.
- Assist with creating Banquet menu items, as well as recipe testing.
- Identifying ways to utilize product in the café and/or outlets to limit waste.
- Assist in monitoring P.M. stewarding staff to ensure all cleaning duties are being completed.
Specific Job Knowledge, Skill and Ability:
The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of skills and abilities.
- Above average mathematical skills necessary to prepare correct food production sheets.
- Extensive knowledge of food products, standard recipes, and preparations.
- Extensive knowledge of menu development.
- Ability to supervise staff and accomplish goals on a timely basis.
- Ability to create theme menus and special presentations.
Qualification Standards:
Education:
Any combination of Education or work experience equivalent to, that provides the required knowledge, skills, and abilities to succeed. Culinary education a plus.
Experience:
Five years’ experience as a Banquet Chef Required.
Licenses or certificates:
Florida Health Certificate
Grooming:
All employees must maintain a neat, clean and well-groomed appearance (specific standards available).
