As the ideal candidate, you will:
- Have a solidified knowledge of traditional dough and pastry production
- Have previous experience in a high-volume production kitchen with a focus on center of the plate desserts
- Have a detail-oriented approach to your work
- Have previous experience with chocolate work, cake decoration and garnish work

As a Pastry Sous Chef, you'll be responsible for:
- Preparing pastry food items according to designated recipes and quality standards
- Maintaining cleanliness and complying with food sanitation standards
- Stocking, maintaining and ensuring proper storage and refrigeration of an adequate supply of all prepared product
- Practicing correct food handling and food storage procedures according to federal, state, local and company regulations
- Preparing daily requisitions for supplies and food items
